Storage of a sofa for a couple of weeks could cost as little as £40, (2 weeks van sized storage, give notice the day you take it on, I've been looking at storage costs for my move), seems daft to throw a house away and all that you've already spent on the move, and the other two in the chain, over a couple of weeks.
The people buying here can only do that date so wouldn’t matter what I do. The person I’m buying the house from has made this issue how would I get a guarantee it’s just two weeks?
You don’t get any guarantees until after exchange of contracts (assuming you’re in England). But you are spending (I presume) hundreds of thousands of pounds on a property. Your decision to go ahead or not with this shouldn't be based on flatpack furniture and a few hundred pounds on storage. Don’t let trivial issues get in the way of your decision.

The faff and hassle, and cost, of moving and uncertainty is all part of house buying isn't it? Unless you'd exchanged contracts, or the Scottish equivalent, there was no contract to move on the day that you've arranged things for

Airbnb? A hotel? Friends / family?

I’m not saying go ahead with this chain. I don’t know what’s best for you. But if the property is right for you then breaking the chain may be the way forward.  And certainly don’t let the cost of a week or two’s storage for a sofa be the deciding factor.

Hotel and air b and b around £2 grand. No funds left as we paid £25k over Scottish home report price

I don’t know the Scottish system but you either lose the sale or you figure something out. Can you renegotiate the price? Can you stay somewhere cheaper than 2k for two weeks? (There must be something cheaper than that). If you lose the sale you’ll lose everything you’ve spent so it’s worth being a bit proactive here.

Premier inn cheapest there is really and air b and b just as expensive. I’d then have to look out of town and travel I doubt city hotels will be cheaper. As we are paying £25k over price any fee for pulling out wouldn’t the too bad. The risk is selling here and she delays delays and no where to stay. Im not keen to sell here without a firm move out date. I don’t think staying with family is viable either. I have spent the day looking for short term lets but none expect air b and b and it’s going to be 1-2 grand atleast..

I would rather not pull out but where would funds come from for a hotel? And my fear is these new build delays could be longer my solicitor isn’t keen to leave me homeless

The person you are buying from is buying a new build which isn't ready.  Surely they should be the party to move into a rental so the rest of the chain can move as planned?  New builds often get delayed so dates come and go and there is no guarantee it will be ready on the date you and your buyer want.  Not sure how the Scottish system works though.
