4.5lb off for me today! 😱 I got my 1/2 stone award and slimmer of the week, and that's 11lb in total now. I'm amazed, and very pleased! I'm the lightest I've been since the start of covid now. I'm in a good frame of mind, and long may it last. I've got a load of home grown courgettes from the SOTW basket along with a load of tins and some fruit too. I'm not the biggest fan of courgettes but will try and find some new recipes to try with them. If anyone has some good recommendations, let me know. I usually just do ratatouille with them.
We went up to Exmoor this morning for a paddle and a bit of fresh air amongst the shade from the trees. It was lovely.

Well done with your weight loss, very encouraging. There are some good recipes for courgette soup if you googley though you might feel its too hot for soup, I'm of the opinion its never too hot for soup and had some for lunch. Courgette cake is also good but thats probably not in your current food plan. I like them cut into thick batons and then griddled or else sautéed with some garlic.2

I've also done a simpler salad version of the pasta recipe, without the pasta and with olives (basically courgette ribbons with lemon, pepper, a tiny bit of olive oil and some olives, sometimes a sprinkling of Parmesan)Debts 04/01/25 01/12/25

Courgette fritters can be on plan and you can do lots of variety in your flavourings - example here. The courgette curry on g00d f00d is popular.
It is quite liberating to NOT have grown any this year, I am not keen and find they make excellent compost and are perfect for making the neighbours avoid you as you wave spare produce at them.My mortgage free diary: +++ Divide by Cucumber Error. Please reinstall universe and reboot+++

My sister had a glut of courgettes a few years ago and believe it or not, steamed courgettes are nice. Just cut them into rounds about an inch thick and steam them until tender. I really like them like this and they are very healthy if you are that way inclined.Credit card 1891
