Is there any guidance on how to do an injunction in cases like this? I actually struggled to find a solicitor willing to take the case on. I feel it should be reasonably manageable but there's no guidance out there at all.

Ask one of the free housing advice clinics. Almost everywhere has a University with a law faculty and most do this, if you aren't in a Lawstop or similar pro bono law advice area

I'd prefer putting a plastic bag or something like that over the camera as there can be no damage to the equipment.
The perpetrator should be extra careful not to be identified as blocking their view is likely to be considered some sort of tortious interference with their money making scheme  contractual agreement with the landowner.

There was a case last year with a landowner on the Isle of Wight who disconnected the cameras from power/network because the PPC kept issuing charges to staff and genuine customers.  IIRC the operator tried going after them for breach of contract.  Not sure what happened with that one.
Always remember to abide by Space Corps Directive 39436175880932/B:

    It's really very simple
You make your application using the relevant form and what kind of injunction your after . Ie what you to want to stop on this occasion.
    You include your evidence/witness statement.
You log it with your local court and pay the fee
Given the type it isn't ex parte
Then the court arranges a hearing date
If you go ahead with this feel free to send me a private message and I can guide you through the process
It's actually very simple and the only fee is the application fee!
These also tend to be quite short hearings and are non tracked
