If you want additional comfort your email has been delivered then you add your email as an *additional* addressee, not in replacement of the companies contact email. You don't need to use a different personal email address.
This is all getting massively over-complicated. Sending an item by recorded post gives no practical greater security than an email and email correspondence gives you a quicker, better, time-stamped audit trail.
If the company wants to be difficult or doesn't plan to respond they will behave in that way regardless of whether they receive a letter or an email.

Nice idea though.Oh okay -- so if you have an alternative address (e.g. a throwaway/temp address ...) then send it From: You1 to You2 ... either way, it's all you and they are different. Second thought, if you are with gmail (or some other providers), you can create "extra, unique" emails by adding +something, so yourname@gmail.com becomes yourname+1@gmail.com and those are different, but both come to yourname@gmail.com. A handy trick to know for other situations too. Google and see if your provider supports this, or cautiously test it with something non-privateIt's not setting up an EXTRA address, by the way, the feature has probably been there all along without you ever needing it. Jesus, this appears to have become way more complicated than it needs to be.
But if a hard copy letter is what is desired and the OP can access the email template, I assume they can. And assuming they have a modern'ish Android mobile phone. Screenshot the template, open the screenshot in Photos, use Google lens to select and copy the text and paste into a document of your choice.
I guess the OP will have an Apple phone!0 -
