Anybody know where I can get hold of a SAR template in Word format please?

I doubt there's an such thing as it's so simple.
"Please send me all the data you hold about me, as permitted under the DPA 2018."2 -
ICO has a wizard online that does it for you. Loads of templates on Google (but some use outdated legalisation). ICO has the most up to date information and is easy to do.2

It doesn't generate a printable output - it wants to send the email directly.

Email doesn't give me confirmation that it's been delivered. A recorded delivery letter gets a signature.0 -
Recorded delivery does not either, no one signs for anything now. If there us a sig, then it is only the postie👍. Recorded delivery can be refused by co.GaryBC said:

Better to use std post & proof of postage, as just like sending a email it is taken as being received.Life in the slow lane1 -

Perhaps the email client you use doesn't automatically give receipts and read receipts, but they are very common in business, especially regulated businesses. A read receipt will tell you each person who opened the email and the exact time and day.
If you can't find it on your preferred client there are plenty of free extensions (such as Boomerang) available.
A recorded delivery letter doesn't get you a signature, it gets you a wiggly line drawn by somebody's finger on a touchpad.
