Can anyone explain how TV Licensing have established I'm watching iplayer?

It's possible, plus to watch anything on the BBC website you need to sign in and that a clue in itself1

Are you are logged into it with an email and when you first signed up you gave a postcode which was then associated with that email address.

It's a scam , do not reply to the email and delete and block it

if you have in the past had a TV license and given them your email address fred@gmail.com and then subsequently say you no longer need a license and then you subsequently sign in to iPlayer using fred@gmail.com they will 'know'.0

if you don't watch TV, then I assume you are not logged in to iplayer on any device. So your daughter will have logged in with her details. So they wouldn't have your email address.
Just think, how would they have or get your email address.
If you'd registered for iplayer and were logged into it on the device, then it would be in their logs, but otherwise no.
From your IP? No, for this they would have to ask your ISP for your details and this requires a court order, even then they'd probably get your address not just email. If they were doing this, there'd be stories everywhere as cost wise they'd do it in bulk and have to show they suspect you doing it illegally.
So as has been said, it's just a coincidence and it's spam.
