    Just to p!ss them off, I would send them a copy of my driver's licence but with the photo redacted. If they don't accept that it is an immediate complaint to the ICO. They have nothing to compare the photo to and do not need it. 

    In the response they sent regarding the missing email, have they included all header information as ordered? Is that pdf attachment a copy of the whole, unredacted email with their header info? If so, please show us a copy of it (the headers) but with just your email redacted.

    I would send them a copy of my driver's licence but with the photo redacted.
    Or perhaps a photoshop overlay of someone famous (or infamous maybe), that would send them in a spin!

    Will do. So the pdf attached in the email is their rejection letter, and it has a different title to the one in their email screenshot, I know that for sure, which seems odd to me.

    The image I previously posted is the only thing they've sent regarding emails/headers etc. What is it they're missing that I should be looking for? Company names etc? 

    The email they sent contained the image I previously posted, and this pdf of the letter. You can see in the screenshot of my email the difference in pdf titles between this one and the one in their screenshot.

    What attachments? Are you referring to the PDF and the JPG files you ave shown in your email from them If so, we need to see the contents of those attachments. They mean nothing unless tey show the actual headers of their sent email. They should have accessed the email from their "sent" folder and provided the email with those headers.

    Ok I'll post everything in one comment so it's easier to see. The first screenshot is mine, of the email they sent claiming to contain their original rejection letter. The next 2 correspond to the attachments shown in this email. The second is the screenshot they claim is of their original email(Capture3), and the third is their rejection letter(46ba52e-...) which as you can see has a different title to the PDF attachment shown in Capture 3 (5882021_AR...)  if you get what I mean (it's all a bit inceptiony)
