I have some chocs in moulds at the mo, didn't have a prob last time but now I can't get them out, I just broke one, hehe guess where it is now?
Maybe I'm just being impatient, if they're not out by midnight I'm getting me a spoon and having dessert:rotfl:

Well I tempered the chocolate. Stuff it in the freezer to cool and it came out well. Had that gloss on the top (just poured it onto tin foil) and had that snap! But as it warmed up had the same melty to the touch problem. Strait out of the fridge again it was ok to handle for a short while and had that snap. So I think better chocolate is called for!

Where is that Qwiksave....you have shown her a thing or two...she was getting too big for her boots anyway........:D

Pot calling kettle springs to mind...:p I was just 'getting a life' and now I'm back to the serious business of chocolate and chocolate making and more importantly, (not really!) writing about it! ;)

So did 'tempering' mean 'using a thermometer to get a certain temperature' Jem8472? Sorry, I don't know... I didn't see the youtube video as our computer is too old & cranky...
Those chocs & biccies you made are fantabadobe hels02, well done you. :T In fact they look so lifelike that I feel I could reach into my computer screen and nick one - its just a shame that I can't. :(

I think I might do some more myself tonight, but not when that raunchy series is on BBC1 tonight I know I don't usually watch TV (see my Avatar) but that is an exception!..

OK I'm a chocoholic on a diet (yes hello LouBlue!), whos given up chocolate for lent...why on earth did I decide to make these for my BF for valentines day? Do you think licking the bowl counts for Lent????:D

Here goes nothing! I'm going to make a chocolate slab tonight and if he's lucky one tomorrow too! :D

If anyone watched the chocolate tempering video on youtube - were you as concerned/dirty minded as me when she said you can dip anything into the chocolate :D

well after lots of reading from lots of websites. To mold chocolate and get that finish, that "snap" and the melting point of the molded chocolate (body temp) you need to temper it.

To temper you have to heat to 45C to melt the choc. then let it cool to about 27c to start forming the correct crystals in the cocoa butter.
Then you need to agitate the mixture to help form the crystals.
The the chocolate needs to be heated up to about 31c to melt some of the other crystals that are not needed and it gets to a more workable temprature.

    Thats it really.

argh ok im stressed! i listened to my mum who had got the complete wrong end of the stick with this chocolate slab and thought I wanted to give the "slab" in the baking tray. I now have a ROASTING tin full of chocolate in the fridge...and when I've just re-explained that I need to get it OUT of the roasting tin...she said "ohh I thought you wanted to leave it in the tin" ....what on earth am I going to do? It looks so carp!!!!!

I was being too impatient, they came out of the mould really easy once they were cold enough, I just ruined one and just had to eat it (it did scream loudly for me to put it out of it's misery - well what's a girl to do) ;)
I shan't post pics they are just like the ones I did last week.
    Good luck all with yours.
