    I attemped this today...
    Melted the chocolate in a bowel over boiling water, it mostly melted, and then started going hard!
    So i quickly scooped it out and stuck it in silicone cake cases, but they loom awful. Just lumps of lumpy chocolate (taste nice though!) in the cases. How do you melt chocolate!?

    You should melt it over simmering water not boling i always turn the ring off as soon as water starts to bubble then just leave it to melt.

    Also make sure the water doesn't touch the bottom of the bowl, and make sure no water gets inside the chocolate

    sounds like you got some water in the choc. it causes it to sieze. You can put a little dribble of veg oil in to get it runny again.

  • Can i ask, if want to decorate my choclate after it comes out of the ice cub tray, say with white chocolate, is this possible or will be be messy?:confused:
    Any suggestions for me?

    I think it depends on how you want to decorate it. You could dip it in melted white chocolate perhaps?

    Okay, I am planning on making lots of chocolate slabs for my son to give people. I had a go yesterday as a practice and I've realised it's harder than it looks! I used a silicone teddy bear shaped tray. I melted the choclate no problem, I did it in a bowl over simmering water. It poured smoothly into the tray and all seemed to be going well. I left it on the worktop to set and it took a couple of hours. When I tipped it out I was really pleased with it however it started to melt straight away. I put it on greaseproof paper and that was okay, but when I went back to it a few hours later it had already started to go dull and a whiteish colour in places.

    Does anyone know what I did wrong and how to fix it?

    To solve the melting problem you need to temper the chocolate.

    I do the first method the site describes the seeding method. seems to work ok but chocolate is hard to work with!!!

    The white bloom is called sugar bloom. It can be cause by improper storage, where the chocolate gets warm and cools a number of times.

    But the white bloom on yours would be from them not cooling evenly. Probably because it was not tempered.

    As for kim_possibles question.

    you can decorate the chocolates after you get them out of the moulds. You can use melted white chocolate, I found it easier to buy a squeese bottle to make it easier to "pipe" onto the chocolates.

  • Hi, I made some chocolatey bits with my kids yesterday and the instructions to temper were melt 70g of the choc in the microwave on defrost setting and then add the remaining 30g and just stir it in til melted and it turned out well.

    What we did was pour melted choc over bubble wrap so if you wanted a different texture to your slabs you should try it it looks really cool :)
