The Al Rayan application process requires a wait for an account number to be sent by post.

Maybe so for new customers, if you have other accounts with them it can all be done online and you get all the account details along with the reference number needed for the initial deposit in real time.

Call them, they will give you your sort code and account number.
Then you can set up the app.
    Well that’s what I did.

Not even for new customers. I am new and get account number instantly. You need to choose "Bank transfer" for initial deposit. The sort code, account number and reference are all listed at the end of application.

Existing customers should see their new account, including sort code, account number, and reference (LIB#####), within the app after completing the application, assuming they pass electronic ID verification. At least, that was my experience. As you say, new customers can get those details if they elect to make their initial deposit by bank transfer.

I am an existing customer and did not get my account details immediately. It also took nearly a day for the new account to show. As I knew how to set up an Al Rayan payee, I then made my initial deposit.

Today, 4 days after I applied, I got a thick, heavy, envelope in the post with all sorts of T&Cs, the account details, a request to make my initial deposit, and a request to sign & return the pre-filled application form in the enclosed reply-paid envelope. Total overkill but hey-hoh.

My new a/c was seen in my online banking/app instantly after application.

It might be useful to note, given the £5000 minimum opening balance, that a £1 test transfer can still be used to check the account details. I forgot to mention this earlier in the thread.
