You need to put the name of the local court where you want the hearing to be held. The CCBC is an administration centre.2

I think you should put County Court Business Centre in that box.
That is where you are returning the form to and who you should be effectively addressing the thing to.
Later on that Form - in Box E1 - is the place where you state the name of the Court where you would like the case heard.1 -

Hi,
Please refer to the attached county court letter, my hearing date is 15 March 2023.
on the second page , 11th Jan 2023 is given for document submission.
1. it is more than 2 months before the hearing date, could this be correct ?
2. would I be able to ask for an extension for document submission date? as I will be away from tomorrow and back in the UK on 9th Jan 2023 ( I have mentioned that I'm away until 9th Jan on DQ). it is a very shirt time for me to prepare the WS.
3. on the 2nd page item 6 also states that, each party must deliver to the other party copies of al the documents. does this mean that I have to send the WS to the claimant email 11th jan? ( I have read 12 points and " what happens when " but I could not find any reference)

You won't get an extension. Don't even ask. Yes, two months before the hearing is right, if that's what the Order says.
Can you fit in to put it together while you are away? It is just a case of adapting the WS bundle posted by @aphex007 and then emailing it to your local court (not the CCBC) and the solicitors for the Claimant.PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).
