Its this bit highlighted below, right? Am I correct in thinking I wait for team cretin to send their documents they are going to rely on in court, then I formulate a further defence against whatever evidence they submit, alone with a witness statement?

Yes ... and interestingly, the court notice gives you almost 2 weeks extra than the Claimant, so you can see what they've filed and fine-tune your own WS before you have to file it with the court AND serve it on the Claimant.

I fully expect that the Claimant will discontinue before this gets to a hearing ... or are you needing a hearing so you can recover costs from previous stages? (The thread is 51 pages - too long to go back hunting for the history of your case).

@Jenni_D did you make anything of the part of the front of the letter about the Claimant paying the fee and providing all the required information in the manor that is required?

I read that a bit as the court biting back telling them to act properly (which they might struggle with) ... I was in two minds about posting it incase it reminded the scumbags who may have been on this forum, but then I dont care if it goes to court either. Kind of looking forward to it in fact

Shall I just wait now to see what evidence they bring before starting any witness statement?

Do they have to play the game properly and issue me with documents by 2nd May or the claim will be struck out? or will they try and delay passing me the info like they did with payment of the CCJ etc

You should start preparing your WS so that you are ready to file it before the deadline. No harm in leaving it to the last minute before sending it as it gives you a chance to amend and rebut anything in the Claimant WS, should they file and send your copy of theirs before the deadline. Of course, it could be that both of you play the same game and file at te last minute.

You cannot submit a "further defence" as your witness statement must back up and support, with evidence, what you put in your defence as already filed.  You can, of course, point out anything that the claimant claims that is incorrect.
