Is that an industrial system menu don't have night setback on our Ecodan residential unit?
They seem to release a new version every couple of years so it could just be removed/hidden/moved around, it would seem to be a pretty important feature to me.

    Does yours have this?

Most setback(as you call it) through the programmable thermostat. That's why I think that's an industrial setup YouTube video not residential.

But then again ours is 7 years old lol

Ah that's a par31 controller most residential have FTC models so I suspect this is not going to help the OP

...as I've said, I'm going to have to step back from this, as it's not a user-friendly system at all,
You should be able to just leave it running and forget about it but only after it has been set up correctly in the first place.  It looks as if your installers have not done this and you don't feel capable yourself, even with help here.  Until you can find somebody to help you, you're stuck.  At least you have a few months now when it doesn't matter, so you have some time to get it sorted.

A final thought, it looks to me as if Economy 10 is a red herring as all your Economy 10 circuits are off.  But it is possible your controller has been set to "boost" the heating at certain times and you get cold at other times.  You don't realise this because nobody has shown you how to read or operate the controller.
