  • Everything is vegan
    Stuck to plan ingredients wise. Mushroom risotto ended up being mushroom pasta and Courgette and Aubergine ended up in a Thai curry.
    Last week's plan so far:

    Wed: Asparagus soup and bread 
    Thurs : Thai curry leftovers
    Fri:  Potato and Butternut squash dauphinoise 
    Sat : Impromptu belated mini birthday buffet for granddaughter (7)
    TONIGHT: TBC but maybe something with savoy and carrot (from TGTB box) or I'll make soup from the carrots and have that with something. 
    Not particularly hungry right now so don't know what I fancy. 

    I'll come back with next week's plan later or tomorrow as I want to start running it Monday to Sunday. I've ran it Wednesday to Tuesday, because when I first posted; that's just what day it was 😊. Time for a change!
    So tonight is now Tofish, chips and peas

    The rest of the week (eating mostly from the freezer [F] 

    Ital stew [F] and rice 
    Campfire stew [F] and couscous/freekeh
    Sausages [F], cabbage, carrots [F] and mash [F] 
    Meatballs, pesto and pasta w. broccoli
    Kebab [F] in pitta with salad and chips 
    Chilli [F] and jacket potato
    Mushroom Bolognese (TGTG) [F]

  • Quiet in here at the moment, hope everyone’s ok. Stuck to plan this week and have planned up to next Friday. Planning to shop tomorrow straight after work.

    Fri - chorizo, broccoli and cream cheese pasta 
    Sat - halloumi egg fried rice 
    Sun - balsamic chicken thigh, new potato and tomato traybake, green veg 
    Mon - chicken and chorizo jambalaya 
    Tues - beans on toast 
    Wed - nutty sweet potato stew
    Thurs - salmon with pesto pasta, green veg 
    Fri - sausage and spinach gnocchi

    Back from my mini holiday, and decided to keep it simple.  Out one day, so:

    pasta puttanesca x2
    burger, mushrooms, spinach, sweet potato wedges, egg x2
    mackerel, tomato salsa, spinach, sweet potato wedges x2

  • My stomach was a bit delicate at the start of the week, so I'm just keeping things very plain.
    I've had  a combination of rice or pasta and veg with each meal. So not much point in posting a meal plan. I'm enjoying the simplicity of just throwing different bits together on the plate, rather than a set meal. Also, it means I've used up most of what I got from the TGTG box, having only carrots and leeks now left. I'm using the carrots most nights, the leek I will probably make a leek and potato soup with.

    I have meals planned for when I'm ready to dive back in,  but I'm going to stick to doing this for now

    I’m going to slow cook some ox cheek and ox kidney which I think I’ll make into individual steak and kidney type pies, one to eat, the rest to freeze. I’m also continuing to empty the freezer of things that have been in there way too long, and since I’m away for the festivities, trying to ensure the fridge will be empty too.

    Prawn and veg risotto
    steak and kidney pie, broccoli, carrots
    Hake, Mediterranean veg, sweet potato wedges x 2
    venison stew, broccoli, mange tout x 2

    A couple of changes this past week but mainly to plan
    F- tbc involving beef mince
    S - chicken wings, salad and potatoes
    S - veal schnitzel, peppercorn sauce, veg, baby potatoes
    M - lamb keema saag, rice and naan
    T - chicken, leek and bacon cottage pie Chicken, Bacon & Leek Cottage Pie Recipe | Tesco Real Food
    W - fish tbc will see what we fancy at the fishmongers

    Ended up eating out on Friday evening but all to plan other than that. Operation use up what’s in the fridge this week 🙃

    Sat - tapas with Strictly (and wine 😉)
    Sun - LO tapas if I need anything (out for lunch)
    Mon - harissa potato and halloumi hash
    Tues - smoked salmon sandwich (out for lunch)
    Wed - nutty sweet potato stew 
    Thurs - pesto sausage and veg traybake 
    Fri - salmon, pea and pesto pasta 

    Have also made spicy carrot and lentil soup for work lunches.

    Stomach is a little better now, so got back to meal planning this week.DD2 is here from uni, so nice to be cooking for more than just myself.

    Right, back to proper meal planning after lots of being fed and a couple of days of eating what was around. Nice short week to ease me in:

    Mon - tuna and broccoli pesto pasta 
    Tues - beans on toast 
    Wed - prawn egg fried rice 
    Thurs - sesame tuna steak, sweet chilli and veg noodles 
    Fri - sausage and spinach gnocchi
