I did post mine in the Grocery challenge, but will post again for anybody that doesn't join in with that thread.
Vegan
Everything's changed around from originally posting
Sunday 1st: Grill up
Monday 2nd: Hoisin pork and rice
Tuesday 3rd: Fishless fillet, chips and peas
Wednesday 4th: Meat free hotdog and hm soup and rolls
Thursday 5th : Hawaaian style fried tofu and coconut rice
Friday 6th : was Hoppin John but ended up being Cajun tofu with cashew cheese pasta and broccoli
Today: Savoury lentils, cauli, red cabbage and mash
Sunday 8th : Burger, chips and corn
Monday 9th: Freezer meal (doubara baskra, African stew, curry and rice or Goulash)
Tuesday 10th: Jacket potato with coronation or pulled (bbq) jackfruit
Wednesday 11th: Spicy dhal (from freezer) and naan
Thursday 12th: Dan Dan noodles
Also almost on a new week, wow that flew by!
Instead the meal plan went:
Monday 9th: leftover savoury lentils, cauli and new potatoes
Tuesday 10th: Moroccan aubergine (29p ones from A1di) with pasta (olives, toms, capers) and some houmous.
Today (the 11th) actually going to make the Hopin John in a mo
Tomorrow (the 12th) : Jacket potato with coronation or bbq jackfruit)
New month starts on the 13th and I have done a meal plan but its subject to change, as may have both DDs and GD here, just depends on what their plans are.
So, it should be as follows (stc) :
Friday 13th : Dan Dan noodles for me and DD2. Hotdog, noodles and peas for DD1 and GD (they don't do spicy foods and GD is suspected ASD and has this meal every Friday ☺️
Saturday 14th: Bolognese pasta with garlic bread.
Sunday 15th :Grill up for dinner/early tea. Dhal (from freezer) and naan for me later if still hungry, as everyone will have gone home by then
Monday 16th : Freezer meal incl dhal if not eaten last night
Tues 17th:Baked Sesame Tofu (if I have any by then), Peanut Sauce and crispy kale (dependant on if still ok)
Wed 18th: Tamarind Aubergine curry
Thurs 19th: Louisana Linguine (although I may use tagliatelle)DNF: £708.92/£1000
JSF: £708.58/£1000
Winter season grocery budget: £600.85/£900
Weight loss challenge 2024: 11/24lbs
1st quarter start:9st 13.1lb
2nd quarter start:9st 9.2 lb
3rd quarter start: 9st 6.8 lb
4th quarter start: 9st 10.2 lb
End weight: 8st 13lb

Things have changed a bit since I was regularly posting meal plans and I now hang out on the cooking for one thread. However, I can’t live without a meal plan, literally wouldn’t know where to start with my food shopping without one 🙃, my plans usually run Saturday to Friday. Here’s this week’s:
Sat - sea bass, spring onion mash, chorizo & tomato salsa, peas (I do like to have something green on the plate 😊)
Sun - out for roast at lunchtime so picky tea (or tapas if we’re being posh)
Mon - sweet potato, spinach and chorizo hash with soft boiled egg
Tues - beans on toast
Wed - prawn egg fried rice
Thurs - pasta puttanesca
Fri - errrmmm…TBA
Look forward to stealing ideas getting inspiration from you all!
Wed - it became chorizo egg fried rice (mainly because I forgot to defrost any prawns)
Thurs - will be spinach and cream cheese pasta (to use up an enormous bag of spinach)
Fri - have decided to make shakshouka (to use some of the glut of peppers)
Not sure I was fully concentrating when planning and shopping 😂5 -
Almost to plan - but I realised I had too much fresh fruit and veg (I’m away next week) and had to tweak in order to use it up. Half a can of coconut milk that was intended for a curry is going in the freezer instead.5

Another change to plan for tonight's dinner! Picked up a YS bag of Med veg in Marks last night so going to use the chicken breasts to do a tray bake. Also picked up a pack of YS Purple sprouting broccoli so will have that with it.

My plan has actually been stuck to in the same order, which never usually happens as something crops up, until tomorrow that is as husband is working late. So it will be hot dog’s tomorrow, unsure about Saturday yet and the paneer curry will have to be on Sunday instead that’s if t3sc0 bring the paneer later tonight anyway.
Had a quick read through and I am going to pinch @justkeepswimmimg spinach and cream cheese pasta for sometime next week, we always end up having a tomato base with pasta, I never think to do anything different for some reason, so this will be something new for us, Thank you!5 -

We did ours for the coming week last night.
F- DS2 has a takeaway and I'll rake the freezer
Sa - Tandoori lamb kebabs, veg skewers and masala chips
Su - Piri piri chicken, corn, asparagus and baby spuds.
M - DS2 out. HM fishcake from the freezer for me
Tu - Eating at my sister's
W - Italian sausage ragu, pasta and garlic bread
Th - Dal, rice, naan and salad4 -
According to my meal plan we are supposed to be having Hoisin chicken with egg fried rice tonight, but a quick visit to the wonderful nearby Community Fridge has yielded a massive bag of goodies so I am swapping things around a bit.
So tonight I am making a pasta dish - diced shallot, garlic, red chilli, red sweet pepper, mushrooms and spinach all stir fried in the wok with some large prawns I already had in the freezer, and some cooked spaghetti. Will be finished off with a good dollop of creme fraiche, some grated Parmesan and lots of black pepper. Other than the prawns and the Parmesan, everything else was free from the fridge. It’s an unbelievable place!
I’ll also have to re-jig next week’s meal plan to incorporate other veg which I picked up, so will be back later with those details.5 -
Hi guys. I'm glad that this is helping people stay food focused and give inspiration to anyone stuck in a meal plan rut.
I have a confession.... I ate a full bag of dyno split sweets earlier, and now I am not hungry for my tea and it's half 7. I only normally eat sweets on a weekend, so I don't know why I was craving them. So, I need to concentrate on my mineral intake again.
I have prepped the Coronation Jackfruit which I am having with a jacket potatoe once hungry. I also made BBQ jackfruit with the other two thirds of the tin; and I've frozen a big portion of leftover Hoppin John for another day. I have also made some vegan mayo from aquafaba as I've none in; and although I love it, veganaise is never on offer at the mo. I just need to prep some pancakes tomorrow for the weekend, as I hate grabbing toast for a quick snack or for breakfast. I'd rather eat a pancake/cereal and have a toasted sandwich for dinner.
