Could we start a meal plan thread again, so it's not lost in the GC?

Another one thrilled to see this thread back, I have taken to lurking on the GC thread and skimming through to the meal plan bits of posts 😂
Things have changed a bit since I was regularly posting meal plans and I now hang out on the cooking for one thread. However, I can’t live without a meal plan, literally wouldn’t know where to start with my food shopping without one 🙃, my plans usually run Saturday to Friday. Here’s this week’s:
Sat - sea bass, spring onion mash, chorizo & tomato salsa, peas (I do like to have something green on the plate 😊)
Sun - out for roast at lunchtime so picky tea (or tapas if we’re being posh)
Mon - sweet potato, spinach and chorizo hash with soft boiled egg
Tues - beans on toast
Wed - prawn egg fried rice
Thurs - pasta puttanesca
Fri - errrmmm…TBA

I sometimes fancy stuffed peppers but cba with the phaff.
I buy aldi pack peppers, aldi mexican rice sachet and a pack of aldi sliced cheese.
Cut the peppers in half, spoon in rice, top with cheese and bake.
Easy peasy.

I like and enjoy meat, but also enjoy my meat-free Monday nights as well. If I find there is perhaps a sudden warm spell its a good time to get reduced root veggies, and then I will make a veggie curry, chilli or lasagne which gets portioned up and frozen for future meals.
I'm not mad keen on rice (probably because I never seem to make it very well ) so use cheese and mushrooms and sage and onion stuffing mix as a replacement.
I shall make a big pot of sweet potato and chick pea curry at some point this week as I was lucky enough to get a reduced pack of 6 sweet potato's reduced for 99p last week in M&S and have a good stock of tinned chick peas in my tin cupboard. last weeks sort out of the tinned cupboard unearthed some tins that had been pushed to the back. When i make a curry I literally throw almost anything in it.great way to use up bits and pieces i find
All of last weeks inventories that I did has shown me stuff that will be used up at some point this month so it will help to keep the food bill down.
Some great ideas are on these posts which give me some more ideas. Out of interest how many spring onions would you use for the spring onion mash ? Tesco's have bunches on offer this week, and a pretty good price and I like to make the most of any special offers and a spring onoin mash would make a nice change from cheese mash and save on the cheese as well

I usually meal plan Saturday, so I can get the kids involved with planning and shopping lists. I budget weekly on a Friday, but am trying to move to monthly grocery budget since I joined the gc thread. Some of the meals I cannot eat due to CD, on these days I have noodles or toast etc but the rest of the family eat the same meal, my meal plan isn’t strictly folllowed day by day, but all the meals will be eaten that week if you know what I mean.
Yesterday was - qu0rn chicken sweet and sour with egg noodles
today- fish fingers, chips & peas
weds- spaghetti bol
thurs- 3 bean stew
fri- paneer curry, rice, flat breads.
saturday- hot dogs and veg sticks
We don’t really have puddings as the kids take theirs with their packed lunch & if the kids are hungry after they have a piece of fruit then crackers or plain popcorn. Now it’s getting warmer they have ice cream, but that is before dinner.6 -
So the Queen of I love a meal plan, is having a blip today. I'm supposed to be doing Hopping John (even went out and got the celery); but now I don't want to cook it or eat it. I had leftovers for dinner, so still quite full. Plus it involved lots of beans and rice (enchilada style wraps), so don't really want a repeat as Hopping John has those ingredients too. I just don't want to be picking later or be super hungry. I think I used one spring onion (maybe two small ones) in a single portion of mash. It had been frozen so chucked in the onion with a splash of milk as I reheated it.
I find they keep fairly well and often buy a bunch as they go in lunchbox noodle or couscous salads as well as stir fries and things.

I ended up grilling some aubergine with some morrocan spice on, with pasta (with olives, tomatoes, capers and sumac) and some houmous.
