I meal plan for four weeks in advance, but it ends up being regularly fine-tuned depending on what happens socially and also what ingredients might appear in the free Community fridge!
This week, it's likely to be:
Sunday : Puff pastry pie filled with slow cooked beef in Guinness, with mashed potato and spring greens
Monday : Harissa spiced chicken breast and cauliflower traybake
Tuesday : Finish the puff pastry pie filled with slow cooked beef in Guinness, with mashed potato and spring greens
Wednesday : Prawn, sweet potato and lime curry with rice
Thursday : Hoisin chicken with egg fried rice. Maybe a spring roll, if I can find them in the freezer.
Friday : Coconut-crusted oven baked cod fillet with a sag aloo side
Desserts for the week are lemon meringue pie, creme caramel, and tinned mandarins in orange jelly with a dollop of cream.

We go Friday to Thursday, with my main shop split between the butchers, bakers & supermarket (mainly for dairy) on Thursdays & the local market for fresh fish, fruit & veg on a Friday. This week's plan is a bit chaotic as we've had lots of visitors to feed over the weekend - all family & friends - so I didn't know until this evening how much stuff I'd have left over to base the weekday meals on! There's always a veggie/pescatarian option as the two DDs do not indulge in meat. Anyway, main meals as follows:
Friday: chicken biryani, lentil dahl, rice & veg with naans & poppadums, with raspberry tart & HM strawberry & raspberry ice-cream for pudding
Saturday: Spaghetti Bolognese/ tomato & mushroom sauce, with peas; pudding was leftovers from Friday or fresh fruit & yogurt
Sunday: Roast chicken/halloumi nut roast, with roast potatoes, mostly homegrown veg (leek, beet leaves, kale florets, broccoli & carrots) & rhubarb crumble with cream for pudding
Monday: Chicken Jalfrezi/sweet potato curry with rice & beans.
Tuesday: Corned beef/mushroom hash with peas & sweetcorn - I think there's still some HG sweetcorn in the freezer to use up
Wednesday: Stir-fried chicken/cashew nuts & mushrooms, with HG & any leftover bendy veg, noodles (or bulgur wheat)
Thursday: baked potatoes with leftover bolognese, curry etc.!
I don't do puddings on weekday evenings; anyone that wants some can have fresh fruit and/or yogurt or cream. Breakfasts might just be fruit or eggs (scrambled, poached or boiled) & toast, home-made cinnamon buns, or pancakes with fresh fruit. Lunches are generally homemade soup (bendy veg & bone stock from the Sunday roast) or salads, usually involving at least some home-grown, even if that's just sprouted beans or peas on a windowsill. There was lots of chicken biryani left over on Friday; it was chilled overnight & popped into the freezer first thing in the morning, so that will appear again another day, probably when I'm really busy or just feeling lazy! I'm thrilled to see this back again, I can't live without a meal plan....!!
I tend to do my meal plan on a Friday or Saturday , as my shopping is done at Lids on a Sunday in town (which is 40 mins away) so I have to plan it! We stay out in the sticks so there aren't any corner shops we can just pop in to.
My main meals tend to follow a pattern if my DS is home or not as he's away at Uni, and what shifts DH is doing.
Sunday, large roast gammon/ham cooked with sliced paprika tatties, veg and gravy
Monday left over ham,and bubble and squeak
Tuesday chicken in mustard and honey (batch cooking last month)
Wednesday there's only me and DH for supper tonight so it's fritatta any left over ham and kale (we have chickens so luckily we have lots of eggs!)
Thursday Pizza and salad
Friday H/m Beef stir-fry and rice
Saturday Chilli Tacos ( cheapest tortilla chips, h/m chilli , h/m salsa sprinkle of cheese)
Sunday roast depending what is on offer usually chicken or pork
For lunches we tend to take any left overs in our 'c.D player pots' to work,or h/m soup which I freeze, I tend to do traybakes at the weekend which I freeze and we tend to have these as puddings with custard throughout the week!

@K9sandFelines - I remember you too from the vegan storecupboard challenge 😁 it's still going but I was away from it for a while and it sort of fell flat - I'll be using that and this thread as this one gives me ideas to suggest to my non-vegan family! 😉
I used to love stuffed peppers - although mine were done by just halving the peppers, roasting for 10 minutes to soften then putting in a couple of quarters of tomato, a few sliced black olives, some vegan Greek style cheese chunks, topping with basil leaves and drizzling with olive oil before going back in the oven until cooked...might put those on next week's plan! 😉

@leftatthetrafficlights -Once the peppers are softened a bit I like to stuff my peppers with couscous or rice with lots of cooked veg stirred through and topped with grated cheese before finishing off the cooking.5

Meal plan for this week -
tonight - sausages, salad, coleslaw, baby potatoes (all leftover from yesterday's bbq
tuesday - asparagus wrapped in ham with poached eggs
wednesday - roast veg cous cous with halloumi
thursday - Birria (slow cooker chilli - recipe in Ocado magazine) with ruce
friday - birria with wraps
saturday - gastropub at home night - posh homemade fishfinger sandwich, home made chips and pea and mint crushy peas

Change of plan for dinner tonight as there was LO new potatoes from yesterday so we had those fried up with eggs, mushrooms, some of the cooked gammon joint and baked beans.
Tomorrow's dinner will now use up all the small bits of gammon with the last of the mushrooms in a pasta bake (which is what we should have had tonight!).
Will leave a few slices of the gammon in the fridge for sandwiches and the rest will be bagged up and frozen for another time.
Butter chicken will stay in the freezer for another time.5
