I'm also vegan and trying to get out of the very unhealthy way of eating I seem to have adopted over the past couple of months! 🤦♀️
This week its basically buddha bowls (was meant to do this last week but lost my way!)
Sunday - salad leaves; short grain brown rice; roasted peppers; broad beans; beetroot and apple salad; houmous
Monday- salad leaves; buckwheat; steamed fennel and parsnips; puy lentils; tarragon and lemon dressing
Tuesday- salad leaves; quinoa; baked marinated tofu; steamed broccoli and green beans; coriander and lime dressing
Wednesday- salad leaves; short grain brown rice; steamed cabbage and courgettes; cannellini beans cooked with sage; red grapefruit and blood orange dressing
Thursday- salad leaves; buckwheat; steamed squash and cauliflower; black beans; rosemary and lemon dressing
Friday - salad leaves; quinoa; nut balls; steamed leeks and swede; chocolate mint and lime dressing
Saturday- leftover veg and miso ramenDNF: £708.92/£1000

Good morning chums, a bright and sunny morning here in north Kent this morning .Menus done and veg prepped and in cold water in the fridge for the week ahead . Dinner for the week as follows
Today: at DDs for Sunday dinner as I go every Sunday late afternoon and we play scrabble whilst my super son-in-law Simon makes dinner .His hobby is cooking and his roasts are to die for:)
Monday: Roasted stuffed pepper and salad.I stuff the pepper with cheese,diced mushroom and a little onion then top with some sage and onion stuffing ,delicious with a small tomato and beetroot salad.I usually go meat-free on Mondays
Tuesday: sausages and cheesy mash with steamed broccoli and carrots
Wednesday :Hunters chicken with wedges and salad. I have a couple of spare bacon slices I will wrap around a couple of chicken thighs from the freezer and make a sauce with some of my red onion chutney
Thursday: Pork fillet slice dipped in flour,egg and coated with dried sage and onion stuffing with mash and steamed veg
Friday: Haddock , wedges and garden peas
Saturday. Beef Chilli and rice and some diced tinned sauce potatoes, whats left over will be saved to have for Sunday morning brunch as I go in the afternoon to my DDs for dinner sunday night
Not very exotic, but I'm utilising all that I have in my cupboards and freezer at the moment
No shopping needed as I have done my shopping around what I already have in store. The red pepper for Monday is very large as I bought it in the week in M&S.

I love a meal plan,
I made a chicken roast dinner today.
Mon : left over chicken, jacket potatoes and salads. I will have tinned tuna and hard boiled egg.
Tues: seafood spaghetti, this is a simple jar of chilli pasta sauce, heated with a bag of seafood a few peas and mixed with pasta, all bought from aldi. With garlic bread.
Wednesday: Irish stew, I will make enough to take to inlaws. It will be lamb, pearl barley, carrots, potatoes and onions. I will probably have quorn sausage casserole from freezer.
Thursday : Chicken curry, tarka dahl, rice and chapati.
Friday : day off work so hoping for a trip to the seaside, so fish and chips.

I do remember you from the vegan meal planning thread, but even I'm guilty of not participating there enough. Also, there seemed so few of us that the turnover was slow.
Hopefully this way everyone who wants to can join in, and give others some inspiration. It used to be my first port of call years ago. I don't know why it stopped. Maybe when the site had the changeover.

Really pleased to see this thread back, I really enjoy seeing what others are having and pinching ideas.
my meal plan begins on a Friday, although I was away Friday and Saturday so only had Mr M to sort on those days.
meal plan for today until Thursday ( then will begin posting a full week next Friday)
Today
Roast pork, roast potatoes and parsnips, broccoli, carrots and leeks.
Monday
Leftover pork with bubble and squeak using up the veggies leftovers.
Tuesday
smoked haddock, new potatoes and peas
Wednesday
what I call a cold pasta salad mix up. Basically cold pasta, tuna, a boiled egg and salad bits cucumber, spring onion, tomatoes etc. all mixed together with a lemon and black pepper mayo dressing.
Thursday
chilli (already cooked and frozen ) and rice. So a quick and easy day.Well Behaved women seldom make history

Sunday merguez sausages on the barbie with cannelini beans stew and quinoa
Monday omelette with left over beans
Tuesday chickpea and aubergine curry
Wednesday split pea and gammon chowder
Thursday slow cooked heart with lentils
Friday linda mc c veggie country pies
Saturday wild garlic pesto spaghetti with the last of the wild garlic from my garden

M veggie burger, n salad wraps, with chilli sauce
T cheese n mushroom omelette n salad
W spicy red lentil n tomato soup, with crusty bread
T jacket spuds with cheese, coleslaw n salad
F spicy lentil spaghetti n garlic bread
S egg, spicy wedges n beans
S pizza and coleslaw.😀
