    Channelling reverse meal planning!!! 

    My work lunch tomorrow uses up:
    - half of the remaining cress (the rest I will have tomorrow)
    - half of the qu0rn egg ball things (ditto)
    - 3 Cornichons, that have been mulling around in the fridge for a looooong time (ditto) 
    - the last few sprouted mung beans from last week
    - an old shallot

    The cucumber is going yellow in the middle - might be able to rescue some of the flesh after peeling and deseeding but was a bit pushed for time tonight. 
    The olives were mouldy in the middle - i binned those - step too far for me after a colleague got raging food poisoning for 24 hours after eating a dodgy steak on Monday this week. 😳

    Opened a new packet of cooked puy lentils from ‘stores’ - I have loads of these …. Ahem ….
    This will be the endless meal bit that cycles and cycles now! 😂

    I resisted opening my jarred olives until next week, so they will stretch a bit longer once I start them 😊

    Off to look for coach ticket offers …

    I thought tofu was quite a low-ranking source of protein in vegan diets, with edamame beans being a much richer source if you are going to include soya. Tempeh is meant to be healthier too as less processed. Although I'm not a vegan I studied sports nutrition as part of my degree, in case you are wondering...

    I'm not mad keen on the taste of edamame beans and I have never actually been brave enough to try Tempeh as it is reputed to taste dreadful .....

    The highest source I have found is seitan, but that's quite difficult to work with too. I will keep learning ....

    Personally, I would not use Seitan. There are lots of nuts, seeds, pulses (including legumes) and vegetables that provide a rich and varied diet, with enough protein without resorting to highly processed substances. If you are wheat tolerant (and Seitan is wheat gluten) then why not simply use a high protein flour such as a bread flour instead of plain flour, in everyday cooking. I was reading a BBC Good Food article this week to check if I am out of date. I think it aligns well with "Palaeolithic" unprocessed diets that are so good for your gut biome - here's a link

    Thank you. Tbh, my diet consistently deteriorates through the day. It starts well with over night oats made with chia seeds, ground flaxseed, topped with nuts, dried goji berries and preceded by a handful of blueberries. Lunch typically is a homemade rice n beans mix or a commercial veggie soup supplemented with a portion of cooked whole wheat grain, with a handful of cherry tomatoes, followed by fruit. In the summer this becomes a diverse salad with pickles on the side, typically smoked tofu, some whole grain rice or puy lentils and a dressing made with hummus, red wine vinegar and Dijon mustard. I follow up in the afternoon with a small quantity of nuts. 

    My evening meal though, is based around what Mr KK will eat - sometimes this is a commercial vegan pie, spuds and veg, sometimes it will end up being frozen chips, plastic fish, frozen peas with a HM vegan ‘tartare sauce’. I just don’t have the energy or head space to cook two entirely different meals at that time of day. The rest of my evening is mostly taken up with preparing my food for the following day ….

    Currently pinned to the sofa by a purring furry 😊❤️ having slept through for the first time since last Saturday. Glorious!

    I MUST lift the last of my leeks today and start processing them, sow some seeds direct (carrots, radishes, spring onions etc) and work on clearing the ‘Border of Doom’ to make more space for the pretty plants I have ‘coming on’. It will be lovely to be out in the air and the light and I suspect activity will be interspersed with time in various sit spots just taking it all in 😊

    Lucky you with your sleep through, I managed 6 hours last night until the furball wanted breakfast at 4 am.  I'm going to try for an early night tonight.

    We're giving the gardening a miss today after all the rain we've had lately its a bit too wet. And its food courtesy of M&S chilled section tonight, so a rest from cookery - it seems like a lovely day already though so once the morning is out of the way I may take some time to enjoy the garden too - maybe even with a book.  Then I have a whole day tomorrow to do what I like :smile::smile:

    I garden on heavy soil so when it comes to removing entrenched, rooty plants I don’t want, the wet ground is actually quite helpful 😊 

    If it makes you feel any better, Mr KK got woken three times last night by La Belle Floof coming in with ‘offerings’  - two mice and a huge dead rat! Apparently she looked a bit she’ll shocked after the rat!! Idiot cat! 😂😉🤷‍♀️

    That diet sounds pretty good to me (apart from the evening meal). As someone who has resorted to putting a pastry lid on leftover veggie chilli and called it a chilli pie, I can completely relate to that. A big pot of veggie chilli frozen in takeaway boxes and then just chopping cooked meat into his might do you a turn. It means to reheating pots but that's just a bit of washing up.

    I find unsalted macadamia nuts and broken and whole cashew nuts from my chosen whole foods online (bought in 500g (macs) and kilo bags), along with pumpkin seeds, pine nut kernels and chopped strawberry (just 1 or two) makes most things like salad really filling and lovely
