Any clues on whether Creme fraiche freezes? I know I have to whip whipping cream with a teaspoon of icing sugar to stop it splitting/going unpleasantly grainy, but the creme fraiche is likely to be used in savoury dishes and I’m uncertain about whipping it. It is Longley Farm so very creamy (their cream takes some three weeks beyond the sell by date before being dubious).3

Adding to the what freezes well discussion from earlier this week: took out some creme fraiche had leftover last month, completely split upon defrosting. A very brave taste test later and added it to veg mash instead of milk. Glad i had a try at freezing it, not binning it.It's good for the soul to walk with your soles on the soil.5 -
I've had a busy morning processing all the lovely (free) fruit and veg I picked up from the Community Fridge yesterday, the place was bursting at the seams.
So far I have made
- a pan of leek and potato soup
- made a pan of spicy butternut squash soup
- prepared the tender ends of the leeks to wrap in ham and bake in a cheese sauce for tomorrow's dinner
- Cooked sliced mushrooms in garlic butter (I have half a leftover slice of puff pastry in the fridge which I'll top with ricotta, then the mushrooms, then some rocket for tonight's dinner)
- Peeled and frozen individual cloves from 20 large fat pink garlic bulbs
- frozen 20 red chillies
- peeled, cored, diced and frozen 6 Bramley apples ready for a pie later in the week
- stewed 20 red plums with cinnamon and brown sugar, ready to make a plum sponge for pudding tonight and tomorrow
- prepared and chopped a large head of cauliflower, which will be used to make these cauliflower, spinach and cheese pasta bakes later in the week
- chopped and frozen two bags of baby corn and three pak choi to use in stir fries next week
There were also potatoes, carrots, red onions, eating apples, avocadoes, lettuce, cabbage, cherry tomatoes and giant red tomatoes (might stuff those with rice, cheese and mushrooms and bake them when the oven is on later). It's amazing that this delicious food is deemed "unwanted" by the supermarkets and that they are prepared to throw it away - I am also so grateful to the lovely cheery volunteers who take the time to go and collect all this and bring it to the Fridge. Superstars, every one of them.5 -

Out: freezer: last 2 slices of spiced tea loaf. Think i made it like 6months ago, still so very tasty. Sliced cooked gammon (forgot to keep some out yesterday) Last of the wholemeal rice, from freezer salmon, some peas, chard stalks, from cupboard spices all for salmon kedgeree. Last of the allotment potatoes from shed (about 6portions).
In: tins green lentils, long life milk.It's good for the soul to walk with your soles on the soil.3 -
In: 2 lots of 2 portions of veg and pulses soup
Out: sausage and bean casserole for tomorrow night's dinner

Out: beef frying steak. Found a butternut among the potatoes in shed, so a warm salad topped with the beef for dinner.

Not been around much (still have back pain and I'm also back at work). Been doing well using up contents. In however was a selection of ys carrots and coriander. Unsurprisingly that's soup made for 3 days. Out has been much more successful! Passata, tinned toms, freezer detritus and any amount of leftover sauce/chutney from Xmas. Some more going tonight into a pasta bake. Surprised by how well a spoon of pear chestnut and ginger chutney goes in everything... I will get to the end of the jar!4

Not feeling the inspiration for dinner tonight.
Out: cooked chicken pieces, leaf beet from allotment last year, leftover lamb stock from a slow cooker meal. Thinking soup maybe? Last night the warm salad included a tin of green lentils, harissa spice for the butternut wedges, smoked chipotle flakes toasted with mixed seeds to top the salad. Was very yum.
In: 0 forgot to buy tinned chopped tomatoes. Again.It's good for the soul to walk with your soles on the soil.3
