@joedenise could you share which recipe you use for fakeaway kfc? I've had a look at a few recipes and a lot of them require frying in lots of oil. I would prefer something a bit healthier.It's good for the soul to walk with your soles on the soil.3

My Fakeaway KFC is based on this recipe: https://www.slimmingeats.com/blog/slimming-eats-kfc-style-feast. I don't use the buttermilk though; I just cut up the chicken (I use thighs but can use legs or breast if you prefer), dip in egg and then crumbs - I don't tend to use breadcrumbs but instant mash powder! I add onion powder, garlic granules, some paprika, mustard powder and mixed herbs but you can use any you have or prefer!
The main reason for basing it on this recipe is because I don't do fried anything, everything is baked or grilled. I make my own oven chips as well and they cook in about the same time as the chicken with the chips on the top shelf and the chicken on a lower shelf. I turn at least once and sometimes twice. They cook in about 35 minutes.
I serve with baked beans and corn on the cob usually although sometimes I do creamy garlic mushrooms as well (creaminess comes from cream cheese!).

First time doing the spice mix is a faff, but it does make enough for several meals. To be honest, when I ran out I used a tablespoon out of a pack of fajita mix and it seemed fine.

Not having to eat it all at once makes a whole turkey a lot more tolerable!Some days, it's just not worth chewing through the leather straps....

I agree with @bargainbetty @Ellie79. Can always stick it back in freezer as another meal. When i have a big cut of meat i normally roast it. Dinner, curry, slices for sandwiches, soup/stew. Even the sandwich slices can be frozen. Doing a whole turkey in one go might feel like a lot of effort, but once it is done, the rest is easy.
I'll be poaching a large pack of chicken breasts in my biggest pot this weekend. And then freezing individually.It's good for the soul to walk with your soles on the soil.4
