To those of you who love a challenge, please inspire me to defrost the frozen turkey and use it. Not feeling the love! Any and all suggestions Other than the obvious roast will be gladly and gratefully received! Many pleases and thank you. Its a 'proper' turkey. Seemed such a good idea!
Personally, I'd joint and debone it - use the breast meat for curry and refreeze, the rest of the meat - marinade for fajitas or stir-fries, or (if it's too much meat for 1 meal) roast the legs and keep the cooked meat for lunches, and the remaining meat for fajitas/stir=fries/stew etc

You can also use the carcass for stock if you break it up and put it in a slow-cooker

Used up a couple of peppers for lunch today.  They'd been planned for Thursday's lunch but we ended up eating out so stuffed peppers it was today.  Took an aubergine dhansak out of the freezer for dinner tonight.  Just need to cook some rice to go with it.

Have taken out a whole duck to cook tomorrow which should do us at least 3 meals.  Also burgers and rolls for lunch.

I made a slightly odd, but very tasty concoction from stores today for dinner. It was freshly cooked pasta, mixed with little meatballs made by squeezing the meat out of a few sausages from the freezer (I fried these), then added home made ratatouille made from summer veg from the garden (also from the freezer), a few over ripe tomatoes and half a tin of baked beans from the fridge, to heat through in the pan. I then tipped the mixture into a dish, topped it with grated cheese and browned it under the grill. Quite a bit used up there, and it made a filling meal for OH and I, with enough left over for 1 portion for lunch tomorrow (OH has already claimed that :D ).

The duck didn't turn out too well so unfortunately has been binned so tomorrow's dinner will now be something made with mince, possibly bolognaise.

  • Pork belly out of freezer today think that will go in slow cooker tomorrow morning, luckily been gifted some meat which we put in freezer so working our way through some of it. Tonight's tea was lasagne made with pork mince also gifted.

Have got burgers, sliced cheese and burger buns for lunch tomorrow.  Dinner tomorrow night will be carbonara using lardons from the freezer which I've also taken out.

Bought some stewing beef and loads of veg today which I'm going to batch cook into stew/casserole and hopefully plenty to go in the freezer as well as leaving enough for a dinner the night after plus a couple of small portions to have with jacket potato for lunch.
