    Oooh thank you @joedenise I was indeed going to grate it but I didn’t think about mixing it with Mayo! Thank you!

    I’m going to make fajitas/enchiladas tonight to use up the peppers I have.

    If there any peppers still left over pop them in the freezer

    Argh trying so hard! But it feels like one step forward two steps back at the moment. Went to lidl, spent £10.05 which was more than I intended but some of it was mindful, for instance. I got the children their advent calendars which I would have just had to get next week and they got to choose them. I got pasta sauce as I should be able to make an extra days meal out of it with the stuff I already have. And I also got some cream and some fish fingers. Now OH and I love going to a seaside cafe and having a coffee and fishfinger sandwich along with a fresh cream scone, but it’s got so expensive and we really do need to be watching the pennies, so I bought some to make our own as a treat! OH doesn’t know so I hope he’ll be happy with it tomorrow, I intend to make the scones in the morning too after school drop off. 

    And I also had to buy toilet roll which I didn’t know I needed. So rather annoying. And to top it all, the chicken I got out of the freezer was off, so had to quickly nip to coop and spend  £4 on chicken! Which was not budgeted for, going to have to really fiddle about with the budget to try and stay in the black. Although after much fiddling, I am still £85 short of overall budget until 7th Jan. so not really in the black at all!

    It sounds as though your freezer isn't really cold enough if you have chicken going off.  I always keep chicken in my freezer and have never had it go off.  Can you check what temperature it's set at?  It should be a -18 degrees.  Perhaps check the seal as well as it may be letting warm air in which is warming it up.

    Ah thanks @joedenise I don’t think it’s my freezer, I think it’s me freezing it on the best before date and it having already gone off but I don’t realise, it’s when I defrost it and it has a green tinge and it smells is how I know. I’m going to cook and freeze in future.

    I would definitely check that your freezer is cold enough. 

    Provided the meat is fine when it goes in the freezer then it should be fine when it comes out again. Freezing on the "best before" date really shouldn't be a problem.

    If I'm not going to use the chicken I buy either that day or the next I always portion up and freeze in meal sized portions.  But as @RelievedSheff says if you freeze in on the best before date it should be fine when you get it out of the freezer.

    Thanks for that. I’ll look at my temp in the freezer.

    Been feeling really down the last couple of days my mood just hit the floor. Not sure why, lack of funds, being a lot less busy, OH working away. But my lovely friend has just come and met me for coffee with her babies and that always helps.
  • This weather doesn't help.

    I guess you just have to try and keep yourself busy to forget about how glum you feel.

    Love reading your diary. We call this filling cheese savoury up north, grated cheese, grated carrots, chopped onion in mayo. It makes the cheese go further and is my fave sandwich filling!
