    Yesterday was lovely weather and DH managed to mow the lawns.  We even put the chimnea on in the evening and sat out and had a glass of wine.

    Today it’s a different story, very wet and soggy!

    I’ve done my Easter baking (DS is coming home on Friday for a few days).  I’ve made flapjacks, fairy cakes and a Victoria sponge which I’ve filled with strawberry jam and buttercream.

    Breakfast was American pancakes with banana and syrup, lunch hot cross bun and tonight its sausage, egg and oven chips.  Not very healthy today!

    Budgets checked.

    I think this afternoon will be tv and knitting.

    Yes, we had a lovely day in the garden yesterday and cold and damp today. Hoping it improves so we can get some stuff done in the garden at the weekend.  The baking sounds lovely. I was thinking of doing some, but don't seem to have the energy today.   
    Don't worry about the odd unhealthy day of food. We have to have some pleasures in life. We have far too many unhealthy days...lol

    Happy Easter

    DS arrived yesterday.  He goes back on Tuesday.

    We started the day with a fry up cooked outside on the bbq – a bit too blustery to sit out so we sat at the dining table.  We’ve had Hot x buns and cake during the day and tonight supper will be pasty.

    We had a lovely walk on the coast path, its been a few weeks since DH and I have done that (we really must stop taking it for granted) with DS.  Lots of visitors about which is good for the local businesses.

    Quite dull this afternoon so spent time talking and watching a bit of TV.  DS will be out this evening with his mates.

    Saturday and Sunday were both NSDs.

    Nice weather today so some washing done and line drying.  Walk around the village this morning.

    This afternoon visited an ice cream farm for ice cream with DS and had a walk around some ponds and saw the piglets.

    Breakfast of pancakes, lunch was the ice cream and tonight its lasagne with leftover roast tatties from yesterday’s lamb roast.

    What a horrid day weather wise – extremely windy and hasn’t stopped raining all day.

    This morning DH and I met friends for breakfast at the local Spoons.

    This afternoon we have hardly done anything except moan about the weather!

    We have skipped lunch and later we have one of those Thai ready meal bags from Sainsbogs as it was reduced.

    Cooking day today.  I made a loaf, some hobnob biscuits and some carrot soup.  The biscuits were very moreish.  Here is the recipe if anyone would like to try them:

    100g oats

    70g desiccated coconut

    100g flour

    100g sugar

    100g butter

    1 tbsp syrup

    1 tsp bicarb of soda in 1 tbsp water

    Melt the butter and syrup

    Weigh the oats, desiccated coconut, flour and sugar into a bowl.

    Add the bicarbonate of soda & water and stir into the dry ingredients.

    Add everything, mix and shape into balls.

    Shape a tablespoon of the mixture into balls, onto a baking sheet, lined with baking parchment. Flatten and allow room for spreading.

    Bake in batches for 10 mins. at 180c.

     

    Breakfast was porridge with bananas.  Lunch soup and bread and tonight its bangers and mash with peas and onion rings.

    I also made the most of a couple of dry spells and put the carrots from the greenhouse into the veg patch and also the onions.  Also dead headed the daffodils.

    Some nice weather the last couple of days including today.

    I’ve made the most of it by washing and line drying the bedding.  I’ve also made some chicken curry – one portion for tomorrow’s tea and the other portions have been frozen.  We are going to friends for dinner on Saturday night so I’ve made some coconut ice cream as well.

    Had  a ride out on the motorbike this afternoon, stopped at Dobbies to claim our two free drinks.  I bought some Mallow seeds.

    Also called in at the bookies – not very MSE but I always have a flutter on the Grand National.  Spent £8 and won £11.60.  Amongst the 4 runners I picked (including the favourite) the favourite won.

    Breakfast was home made toasted teacakes, lunch a biscuit at Dobbies and early evening meal of leftovers being bubble and squeak, baked beans and fried eggs.

    Usual housework done this morning.  Went for a walk around the gardens at our local NT property.

    Breakfast was ceral, lunch toasted teacake at the NT house and early dinner of spinach and lentil pie with carrot and swede mash.
