  • For some reason I feel intimidated by the box of brownie mix from Waitrose , which I purchased a few weeks back .🥮
    It says it should be consumed on the day, and if any left over should be put in freezer then defrosted when I want it . Not Impresssed .😾

    The brownie might be OK on the second day, you could always warm it through in the oven perhaps?  I have to say that I freeze most of my bakes, otherwise I would eat them all in one go :)  Sometimes it is trial and error and not everything does freeze.

    Breakfast this morning was porridge with blueberries in it  I cooked it with the blueberries in it, I usually add them after cooking.  It turned the porridge purple but tasted really good so I will do that again.  Lunch was beetroot soup (enough left for tomorrow and then that's it gone).  Tonight's tea is home made tuna lasagne from the freezer.

    We had an afternoon cuppa with a Belgian bun,  they tasted really good so I will make them again.  I have two left for tomorrow and have frozen the rest without the icing on.  Hopefully they will taste just as good when I defrost them but we will see.

    I confess I'm slightly bewildered by that Brownie thing - in my experience brownies are one of those bakes that seems to last far longer without going stale than you think they will!

    NSD 1/18

    Feeling a bit, well I'm. not quite sure how to describe it, but I was hoping the world would be in a better place health wise by this time, but reading the news I'm not so sure.  I really must stop looking at the news online.  I don't watch it on the TV any more.  We always have a very quiet Christmas just the three of us and DS is aiming to come hone on 17th.  He was supposed to be going to Prague for New Year, not sure if that will happen now.  I think really its for him that I am concerned, he's 26 and really should be going out and about and not worrying about masks and viruses.  But, he doesn't seem to worry and takes it all in his stride - maybe its my age and I don't like change.  But, when I look back there has been a lot of change in my lifetime and it never bothered me before.  

    Anyway, trying to be positive.  Walked into the village today to get eggs and milk from the farm shop and discovered there was a coffee morning on in aid of one of the children at the local school, so of course, I had to stop for a mince pie, coffee and gossip.  Was really nice and I also dodged the rain.  Got my few bits and pieces.

    Breakfast this morning was poached egg on toast.  Lunch will be the rest of the beetroot soup and dinner tonight is veggie pie (bought) and I think we might pop to the chippie to get some proper chips to go with it!

    I've laid out another quilt and wadded it, so its now ready to be hand quilted.  I now have two quilts to hand quilt and I'm also knitting a cardie, so I have enough to do in the evenings now without any more expenditure :)  I have to be busy when I'm watching TV in the evenings, I can't just sit there and watch.

    Ahhhh....chippie chips - perfect! 

    There is a lot of feeling....."not quite sure" around at the moment I think - it's been a funny couple of years and we probably all need to accept that mentally it's been a massive strain on us, just on the basis of the uncertainty.

    This afternoon its time for a Christmas movie and I shall start with my favourite - Deck the Halls with Danny Devito.  Its really silly but I love it!

    NSD 1/18 - arghhh went to the shops and spent money!  Got the rest of the bits for DS and something for DH.  So that is it for the presents now.  Bought some veggies and made a really nice slaw though.  Feel even though I did spend it was sensible :)

      Breakfast was porridge with blueberries.  Lunch was hot chicken in a bun with loads of veggies and the slaw I made using red and white cabbage and carrots, pulled together with zero fat greek style yoggie.  Dinner tonight is hot sausage rolls with more of the slaw.  Couldn't believe how much I made and that was with using just half of the cabbages.    Just had a cuppa with a very small slice of sponge cake.

    Weather is absolutely dreadful today, been raining and very dark horrible, grey sky.

    Downstairs bathroom cleaned and kitchen done.

    NSD 2/18.  Today an NSD.

    Friends coming round for dinner tonight, I'm doing sweet and sour chicken and prawn crackers.  My friend will make the pudding.  We have decide to go fusion festive and wash it all down with mulled wine.

    So today mostly tidying up and prepping food.

    Weather is quite sunny but very windy and bitterly cold out there.

    Love the idea of fusion festive! Also, I too love making HM coleslaw of various types - in fact I might have to utilise one of the beetroot in the fridge for that purpose - I’ve got onions and some nice yellow carrots, if I bought a bag of cheapy salted peanuts I could throw some of those in too, and dress with vinaigrette perhaps….hmmm!
