  • I didn't appeal to anyone and the only time I got in contact was to request a SAR. Will this go against me?

Judges like to see that you have tried to "narrow the issues" by appealing but there might be many reasons why you did not or could not.  Doubt the judge will let it affect the decision which should be on points of (contract) law.
  • Can I still send a Complaints email to them and tell them I won't be paying or should I leave it?

I wouldn't ! Plus not engaging at the beginning is because you thought it was a sc*m !!

If you are at the defence stage , concentrate on finishing it

No evidence or pictures are submitted with the final defence

Exhibits ( evidence ) is submitted at the witness statement stage in several months time , so next spring or summer , not now
  • So will it definitely go to court or will they back down?

How long is your piece of string?
  • I heard that you cannot argue about grace period to a private car park, only council ones. I Was parked for 4 minutes when they gave me a ticket. So should I bother bringing it up in my defence?

You really need to do more research. Read the trade association's code of practice relevant to the parking company to see what it says about grace periods. If the PPC has breached the CoP then it should be one of your defence points.
