UKPC Parking fine now resulting in letter from the County Court Business Centre

Hi all, ive been reading the pages posts for the last hour and also read the Newbie thread but im really struggling to find an answer SORRY!
Nearly 3 years ago I got a parking ticket from a Super Bowl car park that I had used for years, but a week before the day I supposedly got caught it had changed to UKPC, when I went back to testify, the signs to inform us were that small it was obvious why it had been missed. The Super Bowl was in the local paper with many people doing the same, 100's had been caught out, it was a massive thing at the time.
Plus when I got it id lost my whole world within 2 months, a 15yr marriage, getting made redundant from a 17yr job Id had, Grandad died, my old faithful dog past away, then the cat, it was bl*ody endless, one thing after the other, my head was so far up my behind and I was in the worst place possible.
So this is where it starts, for 1 i dont even know if it was me who had drove there, myself and my ex partner used to go there separately all the time, using my car. But what was worse was when my marriage ended and we both moved out of our family home I was sofa surfing and never received the fine as I hadn't updated my driving licence of moving, so it wasn't only when I had permanent residence I knew anything of the ISSUE, by then it was 2 late and the bailiffs were chasing me..

The problem is I have serious mental health issues and I just went into panic mode, I had zero money so couldn't pay so I just do want mental health people do and just hope it goes away. The anxiety and stress was killing me so I just ignored all the letters and have been ever since till this 'CLAIM FORM' arrived last week, so now im really stressing out about it all, cant sleep, worrying myself to death every time I think about it..
The letter is a CLAIM FORM from County Court Business Centre (Northhampton). Ive seen advice saying ignore, but then seen other replies saying definitely DONT ignore... WHAT ON EARTH DO I DO... I cant cope with all this.. I still have very little money, bringing up 2 kids under 10yrs old, ill never get a mortgage or a loan (im old fashioned, if cant afford it then dont buy it) so not to bothered about getting ccj, yes I dont want one obviously but just want to mention everything to get the right advice, plus bailiffs turning up with my children here isn't something im looking forward to either..
So please please please, can anyone help as I now only have a few days to get the form sent pack as it says it was issued on the 16th August... this is all a nightmare.

Take a deep breath. You've come to the right place. The claim form is the first step in process. You will follow the steps, with help from the regulars here, and you will get through. Can you take a picture of the form, with your details covered, and post it here?4

With a Claim Issue Date of 16th August, you have until Monday 6th September to file an Acknowledgment of Service but there is nothing to be gained by delaying it.To file an AoS, follow the guidance in the Dropbox file linked from the second post in the NEWBIES thread - about ten minutes work.Having filed an AoS in a timely manner, you have until 4pm on Monday 20th September 2021 to file your Defence. That's four weeks away. Plenty of time to produce a Defence, but please don't leave it to the last minute. To create a Defence, and then file a Defence by email, look again at the second post on the NEWBIES thread - immediately following where you found the Acknowledgment of Service instructions.Don't miss the deadline for filing an Acknowledgment of Service, nor that for filing a Defence.4

Tell your MP everything you've told us above. He/she will be in a better place to help on the effects this had on your domestic/mental health side of things. We'll help on the technical, court side of things. Is this just one single ticket, now running at a couple of hundred pounds or so? Unusual for UKPC who tend to pitch a court claim for multiple tickets running at £600+.Which solicitors are representing UKPC?Please note, we are not a legal advice forum. I personally don't get involved in critiquing court case Defences/Witness Statements, so unable to help on that front. Please don't ask. .
I provide only my personal opinion, it is not a legal opinion, it is simply a personal one. I am not a lawyer.

This means that all the dates in that earlier reply, and the one you have quoted here, are wrong.
The good news is - you have much more time than I originally said.
I have now edited my earlier post and it now has your correct target dates.
Sorry about that.3 -

You are not 'complaining about the AOS'.
You are filing an Acknowledgment of Service as detailed in that Dropbox file I mentioned.
Who suggested you complain to Superbowl? Far too late for that.
Did anyone mention the DVLA?3
