    Remember - don't get sucked in to any daft argument or rant. If they go off on one, stand your ground, look bemused, !!!!!! your head to one side in a puzzled manner, wait for them to stop, and then the mantra;; "Show me evidence that it's yours." When their mouths flap, shake your head sadly, and say, "You must be bonkers if you think you can steal someone else's land" and walk away.
    If they dare to try and 'reclaim' it - put their plants back and stuff - call the local police. It's now harassment as well as whatsit, property theft?!
    If you know if/when they are going to approach you, try and have your phone on record. If they add cussing and threats - implied or otherwise - to their rant, they will soon be told to C&D.
    It needs nailing down. They need to know 'this is it'. End of.

    I have a Ring type camera on my front door, should they kick off I'll ensure the 'conversation' is within range of that and therefore recorded.

     I've removed her plants (bar one) and put them on her drive.
    Why have you kept one of them? Now you've claimed ownership you need to treat it as your own. Extend the sunken boundary slabs across the soil and add you own features. Leaving it as it is it looks like no mans land which is open for dispute.

    I was unable to remove it today, its a small tree, didn't have the tools to remove it

    Simply reply with copies of the boundary images. A link to adverse possession rules changing and and tell her she is welcome to apply but confirm in advance you will decline the request and say you are looking forward to them spending tens of thousands of pounds on legal fees with no basis in law on their side
