Don't have Housing proof letter for UC and landlady will not give a letter for UC ?

Ok, so that would be used to prove occupancy, but you will need something to prove you are liable for the rent, not just that you have been paying it.
That is a letter from the LL or a tenancy0 -

What if UC asks for a payback of housing over payments.(£900) Do they consider housing allowance and is adjusted .
I don't want the stress of paying back and one more debt. UC is asking for this proof of payment now after 12 months. Had i known of this before wouldn't have claimed as i know she will never give and as you said she doesn't want to declare the income.0 -
The reason they didn't ask for proof when you claimed a year ago was because of Covid, under normal times proof of your liability would have been needed. At the time of your claim they just "took your word for it" now they're asking for proof, which is correct.You will also need to report changes onto your journal if you're out of the country for longer than 28 days.2

£900 seems a lot per month. When you claimed UC did you report that you were living with your landlord?

yes. and £900 is inclusive of all the charges. She even cooks food some times and i don't pay for it. I believe as all her children have left her she wanted someone to stay at her place. 11 yrs ago i was just paying £500 per month. If you're over 35 then you'll be entitled to the 1 bedroom rate of LHA for your area. You can check what that is here. https://lha-direct.voa.gov.uk/If you're under 35 then it will be the shared rate, unless you claim a disability benefit such as PIP daily living or DLA mid/high rate care.If your rent includes money for eveything else like gas/electric etc then UC won't pay that.
