    Apple has always been used to stretch rhubarb, they make a good pairing.  However I think crumble (I'm obviously not a fan) is a waste of rhubarb.  I'd rather have rhubarb batter pudding.  I've never tried rhubaarb & apple batter pudding - now that is something I should think about!

    Thinnk toad in the hole with sugar.

    Sweet Batter Puddings

     

    *Pancake Batter

    4 oz plain flour

    Large pinch salt

    1 egg

    ½ pint milk

    15gm melted butter

     

     

    Yorkshire Pudding

     

    Pre-heat oven to gas mark 7

    put 2 oz butter  in baking tin & heat until faint haze appears**

     

    then for

     

     

    Rhubarb Batter Pudding

     

    Add 1lb rhubarb cut to 1” to baking tray & sprinkle with 4 oz caster sugar & 1 level tsp powdered ginger.

    Pour in pancake batter.

    Bake for 30 mins gas 7 then reduce to gas 6 for 15 to 20 mins

     

     

    Dried Fruit Batter Pudding

     

    Repeat from * to **.

    Add 4 oz mixed dried fruit to baking tray & sprinkle with 2 oz caster sugar & 1 level tsp fine grated lemon rind.

    Pour in pancake batter.

    Bake for 30 mins gas 7 then reduce to gas 6 for 15 to 20 mins.

     

     

    Apple Batter Pudding

     

    1lb apples, 4 oz caster sugar & level tsp cinnamon

     

     

    Plum Batter Pudding

     

    1lb plums, 4 oz caster sugar & level tsp mixed spice

     

     

    Bacon Batter Pudding

    8 to 12 oz chopped lean bacon

     

    It's from a very old Good Housekeeping cookery book that was given to me as a wedding present in 1969.  A good job because I didn't even know how to boil an egg.

    @badmemory thank you! I'm jealous of your cook book too. I used to have the Stork one which was a good basic book but I lent my school cookery books to someone when I lived in London and she left them on the bus. I was gutted. The Stork one sells for about £30 now 😯

    I've just found my mum's McDougalls home baking cookbook.  The recipes are so easy - nothing fancy but good basics and mostly store cupboard ingredients.

    Good morning all. It's a house cleaning kind of day today. The HT has gone to college and his partner has gone home so time to crack on. There was no point doing cleaning yesterday while they were here to mess it up so I spent time on crochet, a couple of hours sorting best friend's paperwork with him, had coffee and did the crossword again with bf, then I worked for a bit. I fed everyone that showed up and the apple, cinnamon and rhubard crumble was tested and approved. 

    As well as cleaning I have paid £15.67 extra off my loan today which has reduced the term by another month. I have overpaid the credit card by £220.00 so I'm happy with that after "expensive August" when I mostly spent money. 

    My fifteen minute teabreak is nearly over. The washing machine has nearly finished load one (HT's bedding) so I'll put load number two on to wash while I carry on cleaning.

    I nearly forgot.....best friend bought me some kitchen roll, toilet rolls and a bottle of gin when he called yesterday. It all helps and the gin lets me know that I'm appreciated 😊
