I agree it seems very unlikely a penalty for no insurance will be issued. If the car is insured then issues with the driver would generally only be investigated in a police stop.Pay the fine and points, or go on the speed awareness course if it's offered. Inform your insurer, answer their questions honestly, but don't volunteer what car you were driving unless asked.Consider yourself lucky and be more careful in future.0

Admiral used to ask for details of courses but they no longer do so and as far as I'm aware, no other insurer in the UK requires that you disclose this to them.1 -
I doubt they’ll check.If they do it’ll be 6 points and a Band C fine (less 1/3 for an early guilty plea). Plus costs and surcharge. Some police forces offer FPNs for no insurance.Keep quiet and you’ll probably avoid any consequences.0

Provided that the OPs girlfriend had insurance on the car, it would be showing as being legal on the insurance database so there would be no way for them to possibly know that the driver wasn't legally covered.

Well, in 2018 I went on a SAC after being caught for speeding in my neighbours car and their insurance policy didn't cover me so I was driving it using my policy which included DOC cover.
At no time was I asked to prove that I was insured on the vehicle concerned.0 -
Even if there were no insurance on the car at all it is unlikely to be picked up as the speed cameras managed by SCP are not set up for that. It's a production line set up for speeding/red signal offences only. It only comes up for manual inspection if someone thinks it's clever to put down Uncle Roger from Manitoba.0

Where does the OP say he wants to avoid the consequences? And where does anybody attempt to help him do so (not that they could anyway)? As far as I can see he was asking about the possibility of his crime being detected. Not quite the same thing at all. Most of the responses I've seen (yours aside) comment on that possibility.1
