Uninsured speeding

Points count for totting up for three years.
Points are visible on a licence check for four years.
Insurers ask for five years.
When your job title changed, did your policy change insurers - or have you renewed it since you last checked?0 -
To be honest mate I’m not entirely sure if it’s same company or not I’m guessing it’s the same as when I rang they said because your title has changed that’s why Its not included0

Do you live together? If so, then it may well be that DoC cover would not have covered you anyway, as members of the same household. Adding your partner to your policy as a named driver is usually very low extra cost, if not free, assuming they have a reasonable driving record.
As far as this speeding ticket goes, you've got two choices - assuming that she's received the s172 request to identify the driver...
1. She lies and takes the ticket. You both cross your fingers that they don't twig the attempt to pervert the course of justice.
If they do, it's a very serious offence - people have gone to prison for it.
2. You put your hand up to it. You cross your fingers they don't check the insurance.
If they do, it's a serious offence - six points, and an offence code that insurers REALLY don't like. All shall be well, and all shall be well, and all manner of things shall be well.
Pedant alert - it's could have, not could of.1 -
