Nine times out of ten these tickets are scams, so consider complaining to your MP., it can cause the scammer extra costs and work, and in some cases, cancellation.
Parliament is well aware of the MO of these private parking companies, many of whom are former clampers, and on 15th March 2019 a Bill was enacted to curb the excesses of these shysters. Codes of Practice are being drawn up, an independent appeals service will be set up,
Just as the clampers were finally closed down, so hopefully will many DVLA's date base more rigorously policed, persistent offenders denied access to the DVLA database and unable to operate.
Hopefully life will become impossible for the worst of these scammers, but until this is done you should still complain to your MP, citing the new legislation.

THere is an extension from 14 days to 28 when filing
Give us the date of issue, just to make sure

My mistake sorry. 28 days in total. June 8th is the date on the claim form.

Just checked on MCOL again & latest document is still 'Acknowledgement of Service'

With a Claim Issue Date of 8th June, and having filed an Acknowledgment of Service in a timely manner, you have until 4pm on Monday 13th July 2020 to file your Defence.
But as others have said, if you have already filed it then you have nothing to worry about. The CCBC will catch up with the paperwork in due course.
In the worst case, that the CCBC get it wrong, you just wave their emailed auto-receipt at them and they will correct things. Look after that receipt.4 -

My understanding is that it's 28 days from the date of the letter (June 8th) which would make Monday 6th July day 28? Is that not correct?
I know it doesn't matter now as it's been sent in but good to know for future reference.
The email confirmation is currently printed off in duplicate & held under lock & key in a fire & bomb proof safe buried under my property protected by 24 hour CCTV

Your understanding is wrong , KeithP has posted hundreds of these posts with correct dates
5 days from issue date is the date of service , add 28 days to that if the AOS was done , if it wasn't it's 5 + 14 instead of 5 + 28
So issue date plus 33 days
Another factor is it cannot be a deadline on a Saturday or Sunday or bank holiday

You understanding is not quite right.
Have a look at the Money Claim Online (MCOL) - User Guide.
On page 14 of that document it says:How long does the defendant have to respond to my claim?
The court will send out a claim pack to each defendant once the claim has been issued and allows 5 calendar days from the date of issue for the service of the claim. Therefore the 'date of service' is the 5th calendar day after issue.
The defendant has 14 calendar days from the 'date of service' to file a response. If the last day for filing the response falls on a day that the court is not open (i.e. a weekend or public holiday), the court will allow the next full working day for a response. The defendant can extend the time to respond to 28 calendar days by filing an acknowledgment of service (AOS).4
