On your account, is Rate 1 shown as day or night?
Which rate clocks up during the day?

So other than the immersion heater, there’s no other electrical heating in use? How about lots of halogen lights on all day?  The immersion certainly needs to be looked at / sorted because it will be contributing to excessive usage.

There's no need to have the immersion on constantly. It should have two switches - the one that is labelled BOOST should be switched off. If there's just one of you then you should have plenty of hot water even at this time of the evening.
    There's more going on ...................
It’s not just me all the time, especially at the minute but generally it’s just me Monday-Friday and then 2 people for the weekend. I also work most of the week. The problem with the water is a very small tank so is constantly running out of water unless it’s on all the time

If the immersion heater is on in the day time, you'll be paying cripplingly expensive daytime rates.  They are even more expensive on E7.

I’m fully aware the house I live in is less than efficient but that aside, it has still always seemed ridiculous. Nearly everyone I know doesn’t pay half of what I pay for electricity and gas

If the 8/9/18 is the date the meter was installed then that would be about 10,000 kWh day and 6,000 night -
Never pay on an estimated bill. Always read and understand your bill

It's because you're doing almost everything wrongly.  No meter readings, probably very expensive kWh rates and standing charges, peak E7 immersion heater.  It's like having a bath without putting a plug in the plughole.
What are the rates and daily charges that you are paying (don't forget VAT)?

No, no electrical heating in use apart from an oil filled plug in radiator used occasionally when it’s freezing. No halogen lights, everything is LED or energy saving
