I haven't had a real shepherds pie in years denise. Hope you enjoy it. smile

I meant to post that our beef this weekend was absolutely amazing. It's only a generic 'beef joint' at about £6 per kg from Aldi but it's so tender and lean. I cooked it at medium so DH can have some well done bits from the outside and I can have the middle, although he's getting better and will try a pink piece these days.  I should really have made a second main meal from it but DH and I are enjoying it for lunches (and snacking
wink). It reminds me of how my mother used to use her hand mincer to prep the LO beef for a cottage pie mid week.

Quite bright and dry again here. I've washed the loose sofa covers (did the other one last week) so at least I'm achieving something during lockdown.

    Today's EE plan-
B- NAS grapefruit, baked beans (F), fried egg (P), HEB toast, HEA milk
L- cold beef (P), fried veg and pickles (S)
D- baked salmon (P), SW chips (F), carrots, mushrooms, tomatoes, broccoli, asparagus (and might do a cauli steak) S
    Syns- 0
    smiley

    Welcome Max  :)
3k run this morning. Nice sunny day so have a wash load on the line - it’s the small things!!
Food shop tonight so it’s like old mother Hubbard here.
    Food today:
B - overnight oats (HEB), fat free vanilla yog (0.5), cherries
    L - couscous (1), lean ham, lettuce, tomatoes (S), dressing (2)

D - chicken pasta bake with green beans - will attempt homemade sauce (passata, onion, sweetener and herbs - same as I make for spaghettti and meatballs).
    Snacks - satsuma and apple.
    Have a good day all
    Coxy xx

I'd be putting some garlic and salt and pepper in the sauce too  coxy.  It looks like you have HEA to spare so you could have cheese on top of the pasta too.

That ham looks lovely and lean. Hope you don't have to queue too much when you go shopping.

Good shout about the seasoning, cheese and garlic maman. Saw this just in the nick of time! Also added small tin of sweetcorn to add colour. Desperately short of veg here - in fact nothing left except tinned tomatoes now. Hope Aldi is well stocked tonight!  :o

Have to say the shepherds pie was a disappointment!  When I looked at the lamb mince it was actually a mix of lamb and mutton and was extremely fatty so by the time I'd browned it and drained it there was hardly any meat left!  Still at least the mixed veg and Brussels were nice, LOL!  Just enjoying a couple of rum & ginger beers to use some more syns!

Coxy why is your couscous 1 syn - by the looks of it it looks like plain couscous with some chopped veggies in it?  If you've made it yourself with just water then it's Free.

Been a lovely day today and have really enjoyed the sunshine!  Only bad thing was the price of shopping in Mr Ts - only reason I went there was because DH likes their Finest Seeded bread for when he hasn't had time to make his sourdough, so I always keep some in the freezer - and even going there I still managed to forget to get the instant mash to give it a try on the Fakeaway KFC planned for this week!

  • Evening all. Working from home today, so basically sitting down and I've only done 1900 steps so far and my legs are restless. I've just got a few things to finish up then I'm going for a long, long walk. First half with the dog, then a long stride out to the hills after I've dropped him back (he's arthritic so can't do too many hills).

Bubbs: Can I ask how you make the cheese sauce for your lasagne please? :-)

B-  Almonds (HEXB), 1/2 grapefruit, HEXA for latte
L- Coleslaw (SW), ham, salad, satsumas x 2
D - Veg/bean chilli with cauliflower rice. Batch cooked for the freezer
Syns: None yet, possibly a freddo bar after my walk with a cup of tea.

    You can :D
Boil the cauli in veg stock with seasoning, then lift the cauli out, don't drain, whizz it up with tsp mustard powder and 6 laughing cow extra light, if it is too thick and some of the stock till its right thickness :D I use a meduim head of cauli and that does 3 of the silver takeaway tray things , i then freeze them and they are fine :D

Use up/pot luck dinner was a success. Everyone enjoyed and a large (2 person) portion for DH and DS1/2 to have tomorrow.
Looks a bit meagre now I’ve seen the photo!
Aldi was well stocked - cauliflowers were shocking though.
Joedenise - couscous is the spiced one from Costco. I only had one level tbsp today.
Just had 2 custard creams with my first cuppa of the day as skimmed milk ran out! Shocking!

Coxy don't know how your tea fills you up, i would be starving 😂😂😂
Cauliflowers in Aldi here have been shocking since lockdown, they look like they have been kicked round the store 200 times and been there since last year!
    They can't sell any surely?
I got a massive one from Iceland, its was £1.49 though but don't mind when they are big and White
