morning all, thank you for your comments! was a bit chilly in the office yesterday afternoon so i put my work fleece on, it was an 'oh' moment as when i went to fasten it its a lot looser than the last time i had it on!
got 2 courgettes to used up, any ideas?
chilli again for lunch, i actually used the last of the crunchy nut in the cupboard this morning - so that was my treat first thing. todays aim is to drink plenty and lots of speed! dinner tonight is BP with tuna salad using up fridge bits, celery, spring onion, peppers etc etc1 -
Morning all. Thought I'd just pop on before I have to leave to go to the hospital. Still got about an hour so plenty of time yet! Have had my breakfast and just having a coffee now.
klew if your courgettes are a bit soft which I suspect they are with you saying they need using up I would tend to use them in a casserole or a soup. If they are still firm how about spiralising them or just grated them and using them instead of pasta?
Today's plan:
B - overnight oats - HEB; S; F
L - not sure but probably egg, fried up LO potato & vegetables as a sort of bubble & squeak, baked beans or if home early enough maybe a jacket with beans
D - chicken tray bake (using up a bag of frozen roasting veg) - P; S; F
HEA - milk
HEB - oats
Syns - none planned

I use courgettes a lot klew just to up the Speed. It's too late now but you could have added some to your chilli at lunchtime. I cut them into rough matchsticks and add a handful to chilli, Bolognese, stir fries or omelettes. I tend to cut them into rings for other casseroles and hash type meals but that's just personal preference. You can roast them as well with other Mediterranean type veg. Sometimes I halve them diagonally and roast, sprayed with Frylight and topped with Parmesan. They can freeze so that you can add a handful as above but not brilliantly as they go a bit soggy . I'd freeze them rather than throw them out though.

B- NAS grapefruit squash, baked beans (F), HEB toast, HEA milk, fried egg, bacon (P)
L- JP (F), cottage cheese (P), beetroot and cornichons (S)
D- sausages, gravy (F), mash (F,P,S), cauli, cabbage, broccoli, fried onions (S)
Syns- Aldi sausages 1
I'm going to add BNS and carrots to the mash as we really enjoyed it with the cottage pie last week and it keeps the carbs lower. Gravy is free because it's LO from Hairy Bikers' steaks. 😊1 -
All went well at the hospital this morning and I've have finally been discharged after my op in February! Should have been April but we all know what happened then!!! and I've only just had this appointment which should have been last month but cancelled until today. Kept on thinking they were going to cancel again when they sent me texts a couple of days ago but they were just reminders. Glad I haven't got to go back there because Covid numbers are horrendously high there, probably the worst in the country being my local hospital and where I live has the highest number of cases at the moment.

I am not a courgette fan and thought i ought to like them so bought some in the summer 😂 i did this with them , an idea for nest time maybe? it was spag bol and cheese and put in the oven

I had Melon for breakfast, omelette for lunch and we have bubble & squeak for tea with sausage, bacon, beans, egg and mushrooms

You did the courgettes a bit like stuffed marrow bubbs, another good idea. I buy them but when I've grown them in previous years they go mad and I've often found big ones hiding under the huge leaves. 🤣1 -
A grew quite a few courgettes this year but they were yellow ones which were the only seeds I could find! They didn't grow as big as the green ones usually do. I'm planning on looking for the seeds a bit earlier next year so I can get some green ones too - they are definitely more prolific than the yellow ones. I find them really useful for adding to things like chilli, bolognaise, shepherds pie or even savoury mince - anything where you can sort of hide them really.2

Yes, they are easily hidden but I do like the taste of them as well. They use them a lot in Turkey and I eat loads on holiday. Unfortunately my favourite recipes for mucver (fritters) and sort of long chips in a tempura batter are synful. ☹️ Actually, with the second HEA, the fritters might be a possible. I'll investigate. 🤔3

Maman, Mum never stuffed marrow like that , it was with mince and onions (which was rare as she don't like onions) but she sort of hollowed the seeds out and then stuffed whole iykwim?

That's really sad bubbs. There have been so many deaths. ☹️
I think the traditional way to do stuffed marrow is to cut in half, deseed, fill with mince and then tie it back up with string before baking . I find it easier to cut in big rings, put in a dish, fill in the 'holes' with mince/Bolognese, cheese on top and bake. It's easier to serve in rings too. 😁0
