Using up the half bag of spinach from the Lidl £1.50 box tonight in a spinach and feta pie. Feta was bought to make a greek salad for lunch so using the other half pack for the pie. Will freeze any of the filo pastry that is left for another time - think there are 6 or 7 sheets in the pack and will only use 2 so will split the rest into packs of 2/3.

Any suggestions for using up some oat milk that's been sitting in the fridge for rather longer than it should do? It's left from when my mum was staying. I should probably have cancelled a milk delivery and used it up, but didn't think about it and have plenty.5

Last night was a new recipe for OH - he wanted to try out a h@iry bikers chicken/leek/ham pie recipe - it was completely 'from scratch' including the pastry & totally delicious but...
...twice the price of the leftovers chicken/leek/mushroom top-crust pie we usually make & 😱😱😱 twice the calories per serving...
I'll have to show restraint for the next week to balance out the excess calories consumed!
The rest of the pie is cooled in the fridge & will be portioned up into freezer containers for another meal (perhaps in a month's time - lol).
Lunch today was simple - toasted rye with liver pate, cucumber & boiled egg (danish style open faced) - cheap & easy - using up what we have in 😊4 YEARS 10 MONTHS DEBT FREE!!! @greenbee could you use the oat milk to make a rice pudding? It's not a milk I've used but I absolutely love rice pudding made with almond milk so think it could work!
@rtandon27 the pie sounds lovely but as you say very calorific. I'm making a spinach and feta pie tonight using some filo pastry. LO pastry will be split into a couple of bags for the freezer as will only be using 2 sheets max.

Have got some fish fillets, white fish, salmon, and smoked haddock from the freezer to make a fish pie. Will also had a handful of frozen prawns when I put it in the oven. Will have with some green beans from the garden and some peas from one of the bags which were in the £1.50 Lidl box. Think I may end up having to pod one of the bags and freeze as don't think we'll get through them all before they need using!

Last night we had our second delivery meal since March - tried and trusty Greek local - such a lovely treat, always fresh & with the leftovers, we manage to conjure up a easy lunch today!
Dinner tonight will be pimped-up pizza - basic store-bought cheese & tomato with added toppings from what we have in the stores. A super lazy meal - 10 minutes to assemble & 10 minutes to cook.😁4 YEARS 10 MONTHS DEBT FREE!!!
