We had a couple of corn on the cobs each picked fresh from the garden, literally ten minutes from pick to plate. So sweet and delicious with a knob of butter, flake salt and black pepper. Followed by strawberries (YS in the SM) and cream. Yummy.Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Got lots of mushrooms left so going to make a mushroom stroganoff with them for dinner tonight. Will use quark to make the creamy sauce as have a tub in the fridge which could do with using up, also a bit of Primula soft cheese so that will go in too! Will serve with some basmati/wild rice mix.

Have got some mince out of the freezer and will make some meatballs tomorrow. Will cook in the tomato sauce I made a couple of days ago and serve with pasta of some sort. Have picked another load of tomatoes so I think there might be more sauce made or might just chop and freeze ready to chuck into stews and casseroles later in the year.

I bought some rib chops from the butcher - realised too late to cook them that this was the plan so I will bung them in the slow cooker today, to make sure they are tender. Literally down to the dregs of veg before Riverford and ASDA tomorrow. Wild Alaskan salmon fillets, green beans and petit pois out of the freezer therefore, but I did suggest a tzatziki out of nearly out of date Yeo Valley sour cream with garlic and the last mini cucumber from last week's Riverford delivery.8

Lunch and dinner from the freezer today! Chicken and seafood paella for lunch and chicken to make Fakeaway KFC - will serve with HM oven chips, corn on the cob (from the freezer) and beans (from stores). I love it when I don't need to do too much cooking!

MrsS - we were also down to the dregs yesterday (in a planned way) so had our first food from 'out' since the beginning of March. Our favourite Greek takeaway (which is only a 5 min drive away) - brought us lovely lamb dinners. Lamb Shank & roast Potatoes for OH & Lamb Souvlaki for me. Takeaway never tasted so good!!! To be fair, as we live in the middle of nowhere it is the ONLY takeaway we have access to!
Today we are waiting for our veg delivery - not a set box this week but thankfully was able to pickfrom the 'top-ups' and get exactly the veg we want/need. That should do with what we have in the freezer for the next three days & then our bi-weekly shop will arrive on Monday to restock the fridge!4 YEARS 10 MONTHS DEBT FREE!!! We really need to eat some of the stuff I bought last week - we keep making do. I rustled up bacon and egg (omelette) at lunchtime but there are three meat-based meals waiting, nearly a week after buying. I need to "tetris" some into the freezer I think! Meanwhile I have made more jelly (bramble and raspberry mixed) and just chopped up another 5k of tomatoes - still coming thick and fast.
Got bramley apples to process next and then onions to tie, garlic to clean and courgettes to chop, before I pick again this evening. We have had about 6 meals of two corn on the cobs each so far, with more coming. A completely satisfying crop to grow when they work (we have had some years with only 2 or 3 cobs) - they taste fantastic.
