I haven't got a clue what to make for dinner tonight, I feel like I've been living off salad and toast because it's been too hot to cook. Going to sort out the fridge and freezer today which might inspire me.
Picked a load of plums and figs at the allotment yesterday so going to make jam later - this jam is good in my oaty squares that I bake.

Got some minced beef out to defrost but it was still frozen so I made cauliflower cheese with a few added veggies in the dish for a bit of a change. The yellow (wonky) peppers were goodSave £12k in 2024 - #2 target is £5000 only £798.34 so far

Last nights dinner was a melange of vegetables that needed using up - spinach, button mushrooms, cherry tomatoes fried up with an onion served with some pan fried turkey sausages from the freezer.
Bi-weekly groceries coming this evening to replace all the staples we've run out of, including eggs!4 YEARS 10 MONTHS DEBT FREE!!! We had a load of veg and vegetable fingers from the freezer last night. I think i am going to do jacket potato tonight with a salad and topping of some sort?
Lunch will be bagel and I'm skipping breakfast today as it helps me manage my weight a bit

Made roast chicken yesterday (well DH cooked it on the BBQ on a spit!) so we had LOs with salad for lunch. The rest I have frozen to take home (we're on holiday in a motorhome at the moment!).
Tonight we'll be having some roast pork (which I'd brought with us) with some mash & veg.

Ended up with pasta and a meat-based sauce as time got away from us yesterday. I was going to make stuffed peppers but ended up putting all the sauce with the tagliatelle because we were hungry! - I think we will have a light meal of beans and eggs tonightSave £12k in 2024 - #2 target is £5000 only £798.34 so far

Not sure that I've posted here before but this is how I meal plan for the week by reviewing what I have and what meals I can make using it before I buy anything.
Last night we had a sticky beef stir fry using the pak choi we harvested from the garden, leftover broccoli from our dinner on Sunday and some diced beef we had in the freezer. DH was really happy with it and it wasn't too heavy in the heat.

Last night's dinner was one that OH had planned on making for over a week & I didn't have the heart to tell him turning the oven on was a bad idea! - LOL - it was utterly delicious and well worth his effort! Took hours for the kitchen to cool down though! Oven roasted whole cauliflower on a bed of Lebanese tarator sauce, garnished with roasted chickpeas, lemon zest, parsley from the herb garden & pomegranate molasses - for a man with very simple English tastes, I'm always thoroughly amazed when he decides to try a new 'exotic' recipe! (...and vegetarian to boot!) Amazingly, the only ingredient we had to order was a 1/2 loaf of sourdough for the sauce!
Breakfast this morning was healthy smoothies made from assorted fruit & berry bits from the freezer, and oats, ground flax & coconut water from the storecupboard. Must get out this evening and see if the blackcurrants are ready for gleaning, and stock up the freezer.
Lunch today was meant to be soup & sandwiches - but really, who's going to use the stove top in this heat?!? We had cheese, ham & salad veg piled high on the leftover sourdough bread from last night.4 YEARS 10 MONTHS DEBT FREE!!! Onions, garlic, black kale, broad beans, peas (green stuff all garden produce) cooked with sage butter and served with lemon oil white beans and rescued boiled rice fried and jazzed up 😉 having the leftovers tonight 😊8

Thanks for the welcome! Lunch today is some herby pork balls with cucumber salad that I meal-prepped at the start of the week. I find that lunches when working at home are the one thing I struggle with so went back to the meal-prep ways I had when I was commuting and basically made a big batch of something at the weekend and had it everyday the following week.
Dinner tonight is going to be homity pie with veggie sausages, using up a leek my parents dropped off plus potatoes that have been lurking in the cupboard with some peas from the freezer.
