Last night's dinner was a surprising hit - the recipe called it a lentil bolognese, but it was nothing like the tomato heavy meat -based sauces I've tasted! Really simple - carrot, celery, leek, salt, pepper tin of rinsed green lentils, tin of chopped tomatoes & the real winner was that it was topped with a rosemary/garlic/lemon gremolata. We had it with spaghetti, but both agreed it would have been much nicer with fusilli, mafalda corta or some other well textured pasta. It ended up being a storecupboard meal even though the grocery delivery had arrived, as I was still putting away things & OH wanted to eat sooner rather than later!4 YEARS 10 MONTHS DEBT FREE!!! DH wanted something sweet last night so I pulled together some vegan brownies using things we had in the cupboards. There's enough left over for a little sweet treat each night this week - must get back into baking things again.
Lunches this week are lentil and carrot soup using up some carrots that have almost been sitting in the fridge too long but are still tasty.
Dinner tonight is another attempt to use things up - haddock chowder. Had a craving for it over the weekend, managed to pick up some YS smoked haddock and had a tin of sweetcorn and some potatoes floating around that need using.Emergency Fund - £8572.39 / £10,000 :: Mortgage OP 2025 - £LISA 24/25 - £3200 / £4000 :: NSD 2025 - 2 / 150 :: Books Read: 1 / 52 :: Decluttering - 4 / 1000Engaged 9th December 2010 :: Married 29th October 2015 :: Bought a House 13th January 20178 -

This sounds lovely, can I ask what gremolata is?

Hello Pix! - Gremolata is a sauce usually made by chopping parsley, lemon rind & raw garlic together & then loosened up with a bit of lemon juice. For the recipe we made, there was rosemary instead of parsley. It's zingy & fresh and can really brighten up a plain meal!

We have still got a bit of chicken left from the one I roasted so I expect we will have it either in a small pie or curried tonight (maybe curry-pie!). I am also making courgette and lime cake today, ready to serve at the lunch I am making for local residents tomorrow. At the beginning of lockdown I registered us as a food business with the Local Authority (it's a monthly thing) - they were really helpful. I contacted them yesterday and and enclosed a copy of our Food Safety Guidelines and the Covid 19 risk assessments for the premises and our lunch group. I'm pleased to say the (lovely helpful) lady I have dealt with is coming to observe - I would much rather know if we are getting anything wrong, then I can address it. The rest of the meal will be a simple ploughman's plate, but mostly a chance for a few isolated people to sit in a room together (in small distanced groups) to have a natter. So no dinner for us tomorrow, probably just the last of the (courgette) soup! (Courgettageddon continues)Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)
