Thanks for the Courgette tip Pip! Never thought about freezing a courgette before cooking - I usually turn my glut into zucchini bread or muffins and then freeze them. Occasionally if they are young and thin, a courgette quiche/tart and then cut the finished product into servings and freeze.4 YEARS 10 MONTHS DEBT FREE!!! If courgettes are young and thin, my favourite thing is to cut them in quarters, lengthwise, toss them in a little olive oil, dust them with salt+/-herbs and roast in a medium oven for 20-30 minutes, usually alongside peppers, mushrooms and spring onions. Yummy!

I occasionally make my own sweet chilli sauce using the recipe on the Pinch of Nom website. It makes quite a small amount, just about does for 2 of us with noodles.

Ooh plums Natlie. Haven’t had for ages.Still eating the Jack Monroe curry 😁. It’s the curry that never ends as I’ve been adding more to it each day. Last day today though.Some rubbery carrots will go into lentil soup today, also stumpy bit of celery. I usually add the leaves of the fresh celery but will keep them for the next curry. Thanks for that tip.8

Thanks Pip - I do freeze courgettes but in a diced chunk and never weigh them
- just put 2 big or three medium. I might grate a few - great in chilli or stew, as you say. Most of mine went into soup last year. Lasted all through the winter
It looks as though three of my plants might be cucumbers despite coming out of a courgette seed packet [DOH!]. The other four are already fruiting - the more I pick, the faster they produce...
I meant to add, we had cheese on pumpkin bread toast, with baked beans and one poached and one fried egg each on top last night. Talk about comfort food!Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Morning,
Its grocery day for us so with the veg box we are all set for the week and still on grocery budget, which is amazing I looked back at one month when we were shopping with Oc*do and I had spend over £700 in a month. This month we will be spending £400 max.
I have loads of potatoes so I will do jacket potatoes for dinner, I have some of the new Aldi Vegan Coleslaw in the fridge and lots of salad stuff from my veg box.DMP 2021-2024: £30,668 £0 🥳

I like weird loaf combinations, and I love poppy seeds/pumpkin seeds etc...I'll give anything a go, any more loaf recommendations?

I must confess that the pumpkin seed bread was from Morries - it is a dark rye loaf. I had a sack of dark rye in my amaxon basket for three months from February but eventually cancelled it as lock-down meant my prospects were poor for receiving it.
