Good evening all...I am really enjoying this forum and all the inspiration you are giving me. I got a bit bogged down after having a baby in January with meal prep etc. so having this thread has helped to gee me up a bit. So much so that I have made the jump to getting a veg box delivered every two weeks. It's a local grocers that supply it. We're now on our 2nd box and it's brilliant 😀 I've had to start to think outside of the box (apologies for the pun 🤣) about how to use it all up. We are eating so much better and I'm feeling more positive about what I'm putting in front of my family.

I've been following this reverse meal planning method for a week now and I managed to shop to my budget and I made a list of options and we currently have 51 different lunch and dinner optionsand plenty or breakfast options too, we mostly follow a vegan diet though my daughter eats cheese and my husband has fish. I am a strict vegan and I cook most of the meals.
The kids weren't impressed with the planning as they like to graze all day and there's not enough snacky food but will work out what I can do about this

still reading along and enjoying seeing what folks are planning.Welcome to newbies! Lots of good ideas here.I had to throw out some bean and veg chilli but it was four days old so it had done well. Should have frozen that last portion.Fridge full. Plenty of veg including salad stuff. Could do with celery and cucumber but forgot to add to list. Anyway we did our shopping today so I’ll make do.Made a pot of chickpea and peach curry today. Added spinach and kale also carrots.5

I'm having to empty the kitchen at the moment so that the electrician can get in and get the wiring done ready for the new kitchen (which given I'm still discussing details, won't be fitted for about 3 months). It made me realise that I've lost my focus on using up odds and ends. So I made some lasagne on Thursday to use up the last of an ancient box of lasagne sheets, and have put the last of the spelt noodles on the side to use with some thai veg curry I'm defrosting. When I move stuff back in, I need to make sure that the things that need using up are out and lined up ready to use so that when I have to empty the kitchen again (for filling/painting probably, and then again for it finally having the units installed) there won't be quite so much to move.7

Chickpea and peach curry sounds interesting! Do you you fresh peaches or tinned? The only fruit I've ever put in a curry are raisins! It sounds a bit like a Jack Monroe recipe, is it one of hers?

I sometimes use dried apricots or prunes in Moroccan lamb casserole type things.5
