Last night's dinner was a 'fakeaway' chicken katsu with rice & pak choi. We used BEye's crispy chicken in tempura batter, BDragon katsu stir-fry sauce for me, drizzled hoisin for OH, the last of the pak choi steamed & microwave UBen's pepper rice. Minimal effort for a tasty filling meal, followed up by a very ripe pineapple from last week's veg box.
We've been doing well on the veg box front, keeping the box to a small & ordering the top-ups we fancy - saves us the effort of trying to use up more unusual fare & no gluts of veg to struggle with!4 YEARS 10 MONTHS DEBT FREE!!! I have harvested the first potatoes (2nd earlies) and they look fab. I have a glut coming with lots of courgette flowers and dwarf beans. As for fruit - gooseberries (a trug-full from one bush before it started raining at 08.00). Thankful I have my new freezer. I am going to make custard and stew some of the gooseberries to make a gooseberry fool as our bubble friend is coming today until Monday (yay!). I plan to cook some of our new potatoes and we have sausages fresh from the butcher. I might pick veg or salad - it sort of depends on the weather later.Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Another low effort 'fakeaway' last night - pizza made from dough that was in the freezer & defrosted quickly in yesterday's heat - pepperoni, olives, red onion, tinned sliced mushrooms & defrosted mozza from the freezer - about 10 mins to assemble & 10 mins to bake.
This morning's use it up frittata had all the last bits of last week's veg box - really tasty & emptied up the fridge to make room for Monday's grocery order!4 YEARS 10 MONTHS DEBT FREE!!! Well our friend brought steaks and beer. We shared 2 steaks between 3 and had a large good sausage each, with fresh salad straight from the garden (topped up with fridge bits) and the aforementioned potatoes. I chopped a frozen chilli into shop-bought coleslaw and also put out the leftover stir-fry (which was very spicy and rather nice cold). With proper gooseberry fool (stewed, whizzed with Birds custard and cream!) he sat there telling us of his memories of his late Mother making custard and how lovely it was. So rewarding to have a friend here who enjoys similar things!Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Our dinner tonight was made from bits that I decided needed using during my latest freezer Tetris session - we successfully used up sausages, milk and blanched cabbage.
OH made a yummy toad-in-hole with garlic cabbage on the side. His idea of comfort food😆❣
(Freezer Tetris also revealed a pork stew that neither of us remember making - lol - thank goodness for freezer labels or it would have been a mystery meal! - now to work it into the reverse meal plan!)4 YEARS 10 MONTHS DEBT FREE!!! It was homemade cheats chicken pie with griddle-grilled courgettes and carrots for supper. Too much! Two large glasses of red wine too. In bed by ten pm - shattered!Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)
