Ladies - I'm loving the reasoning - always good to have support for questionable choices 😂
I suppose some homemade guac would have added a bit more nutrition (and calories)...
...or as I'm doing this morning - two boiled eggs! (The big sharing bag still has some left as does the jar of salsa!) Reminds me a bit of heuvos(sp?) rancheros without the fuss!
OH is now questioning my sanity after two months of lockdown! I'm justifying it as reverse meal planning!!!4 YEARS 10 MONTHS DEBT FREE!!! Just looked in the fridge and we have some left over pulled chicken and salsa; not enough for a meal so going to make a pizza base and spread that on top. Pizza and salad for tea lol!8

We have eaten the pack of two duck breasts now - one shared with salad (looked small but was enough) and the other stir-fried with fridge and garden veg - asparagus was just lovely stir-fried!

Veg box day here today - so utility room is all prepared (I do have some drying up to do, but the sinks are clean ready for washing it all) and the fridge is tidy and clean. I have a bit of broccoli, some salad leaves and some pak choi that need eating, as well as quite a bit of fennel. I haven't really been planning for the last couple of weeks so need to do something about it. I've started by getting two lots of stuff out of the freezer - some frittata that needs eating, a thai veg curry (several portions) and some bolognese. I also have plenty of eggs, cherry tomatoes, peppers and radishes. I need to make some green soup from bits and pieces in the next day or so.
So lunch can be a nice big salad - with the frittata if it has defrosted in time (if not, I'll have it tomorrow). Supper will be some bolognese with braised fennel (in fact I might do a whole lot and freeze the leftovers) and pak choi. I need to think of something fishy to do tomorrow which will go with the thai curry for supper. Lunch will be either soup or salad depending on the contents of the fridge...

Snap to the veg box day!
Am just getting a Cook’s Ingredients veg box today, as this week it’s got lots that I like, whereas the other veg boxes don’t have some things I want, but do have the dreaded carrots and potatoes! Plus I still have things left from last week, which I must use today.
He should be here soon, and I’ve also ordered one of their lovely apple and blackcurrant crumbles, which I will have for breakfast with some of their creme fraiche.
Lazy of me to buy a crumble, I know, and not very MSE, but they are nice, and as I can no longer have any Prosecco, I don’t care! 😁 It’s my treat!(I just lurve spiders!)

Our veg box come tomorrow - a medium - with the potatoes & carrots as we seem to have used ours up! 😉

I have lots of turmeric left. And cabbage, but then I keep the cabbage in reserve. I wasn't hugely impressed by the cornish salad, but you probably need to eat it soon as I don't think salad leaves last that well (I've just about finished last week's salad as I had two different bags). I've gone for the salad & veg box now, which avoids the fruit issue and seems to have less of a bias towards carrots and potatoes... it should be here by now but isn't. I suspect there are still additional customers being added to the route. Or maybe it's another new driver who can't find anywhere as we have no road names, and houses have names rather than numbers. I've added a few bits to my box as there were extras available this week at long last. But in any case, I'm unlikely to starve!7

Now have got to google how to cook plantain. Is it usually fried?
