    I also got an enormous savoy cabbage in my veg box, in addition to a huge bag of spring greens and a bag of spinach I already had! I found a great recipe for a mustardy greens side dish which is really quick and yummy - I think we’ll be having this every night this week to use them up.

    It's going to be something simple here tonight. Maybe fish fingers, chips, (savoy cabbage) and beans

    Great recipe happydenial - thank you, I may well make use of that this evening! I also got spring greens...no spinach though. (But courgettes, which is another reason why your recipe is ideal!)

    Just looked at the recipe happydenial, I'd love to try it as it's my sort of meal but no courgettes at the moment  :/
    We're both not very hungry at the moment so had HM leek and potato soup for lunch
    Tea was a couple of sausages wrapped in bacon. DH can now cut things up very small himself providing I raise his plate about 15cms high so he can see his food. A large upturned casserole covered with a tea towel works well - progress   :)

    I'm paying the price for doing too much yesterday, my back hurts. I moved and filled feed bins with 50 x 20kg of feed for the animals. I used the forklift and gravity but even so I had to shuffle the bags into place, so I've spent part of today sitting down, watching some TV and enjoying the fire in the woodburner.
  • @zafiro1984 - I didn’t have any courgettes either and just used shredded spring greens and frozen peas. I think it’s fairly adaptable, I’m going to make it again tonight with yet more spring greens and frozen green beans.

    Glad that your DH is making progress too.

  • I can vouch for that spring greens recipe - we had it last night and both agreed it was a keeper! 

    Half the lettuce, most of a cucumber, the remaining mushrooms, half a mooli and the three veg box tomatoes were used in salad tonight along with bacon, eggs and avocado. Perfectly tasty but frankly it’s really not really salad weather, is it! 

    I think that cauli will get used tomorrow in the threatened pasta bake - it’s an easy one to throw together on a day when I have a little more time for cooking, and means that the curry ingredients are retained for another day. I’m also considering making soup in the next few days, but I’ll have to have a proper round up of what veg I’d use in it.

    Just back from holiday and have managed to menu plan until Tuesday night using mainly stuff from the freezer and cupboards.  Definitely will need to buy some eggs and bread but anything else can wait until I go shopping on Tuesday!

    Tonight we're having some mixed bean goulash, chicken & chickpea curry with rice.  I've got some lamb chops out of the freezer for tomorrow which we'll have with some mash and frozen veg.

    Finally getting round to using the last of the pulled pork in the freezer to have for dinner tonight in some rolls with chips and coleslaw. 

    Made apple crumble last night to use up some apples and brown sugar and it turned out really well for once!  Still have a couple of apples left so need to think of a way to make them disappear this week.

    I vote for baked apples... they are yummy on their own or a bit of yogurt.  Just chuck them in the oven when you have something else in there.

    Oh I do have some mincemeat that I have yet to crack open that I was going to make mince pies with so maybe I can kill 2 birds with 1 stone and it will force me to actually make DH the mince pies I promised him 😂

  • Hello all! I confess to no meal plan this week so we're going to be winging it. Tonight is probably going to be chilli - I've got ragu out of the freezer so it can just have a tin of beans added and the spices and then be served with rice. There will be a chicken noodle satay stir fry in the mix later in the week I think, as the cabbage mountain is still going strong, and we have a freebie bag of posh pasta for one night with a jar of carbonara sauce that Mum announced she wouldn't use - no idea what it'll be like but it won't have cost us anything so...! Friday will probably be a curry night, as I have curry and daal in the freezer. 

    See - this is why I like this thread - 5 minutes ago I had no meal plan! :lol:
