Reverse Meal Planning

We've also got a bit of upheaval in our house after DH detached his retina and had emergency eye surgery a week ago on Friday. He can't see out of his right eye because he has a gas bubble, making sure fluid does not lift the retina again, and he can't see through it. So all the driving, cooking, animal care and housework (such as it is) is with me at the moment, hence radio silence.
I have a chicken I must roast today. It will see us through the rest of the week as we are off to NL on Thursday for a Christmas Market jolly weekend. Sadly he won't be able to use the large indoor pool, but I will!Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

meal plan follow up:-
I jointed the chicken, one breast stuffed with apricot stuffing, and wrapped in bacon, Breast no 2 roasted, thighs and drumsticks casseroled, the chicken back and wings into soup. =3 main evening meals, +1 soup at lunch.
Venison mince into a cottage pie, LO's at lunch
Pheasant pieces, casseroled with mushrooms, chestnuts, a bit of cooking bacon found in fridge and cooked in cider. Not all casserole used, reminder to be made into a pie, I think I'll make a suet crust. Two of the meals are still residing in the fridge/freezer to be used today and tomorrow.
6 meals accomplished with very little effort, I didn't need to do any shopping.
Sometime today - probably after midnight when all is quiet and DH is asleep I'll put some thought into what else can be used for this week.

Sadly he won't be able to use the large indoor pool, but I will!My husband detached his retina in July 2021. No specific trigger just because he is severely short sighted. It got better and then worse and it turned out it had detached again. Second emergency surgery to get it reattached then cataract surgery was necessary because of the resulting damage to his eye. His eyesight is now better than it has ever been but it was a year to conclusion and we had to be really careful throughout not to damage it again. Hope it all goes ok for your husband.3 -
Made Nigel Slater’s fruit crisp tonight. It’s just breadcrumbs, sugar and melted butter. Didn’t have brown sugar but it tasted fine. My mum is gluten free so made her a mini one with one slice of gluten free bread out of the freezer. The big one used 3 slices of bread. Just whizzed it up crusts and all. Probably would be easier with older bread but I only had fresh and it was fine. Used frozen apples and the random mixed berries from the freezer. Cooked it in the oven with the roast. Was surprisingly easy and tasty.3

Hope your DH doesn't get too frustrated or depressed not being able to do things.
How long will it be before he is seen again, and hopefully get back to normal.
Tip to control frustrated OH's
When my DH got very frustrated and started to do things he shouldn't be doing I had a serious chat with him and said 'Remember if things go wrong you don't have to pick up the consequences - that's down to me, so don't make my life difficult.' It has had the desired effect.3 -
Hoping both the husbands make good progress in their recoveries @zafiro1984 and @Suffolk_lass - and sending you both hugs. Hope the patients are causing too much stress to you both.
I've just got over a bout of Covid so have been relying on DH to do everything - he even went and did the food shop yesterday which ended in him saying "I don't know how you did that on your own for a year" (because I'm the only one that drives, I had to do all the shopping during the lockdowns etc). Think he appreciates how much I do around here now and have noticed him being a bit more conscious about not leaving things just lying around! We basically cleared out the fridge and most of the freezer over 10 days of not leaving the house so not a lot of reverse planning to do! Will have to do an inventory of the cupboard and pantry to see what needs to be used up - I suspect a few tins of vegetables and fruits which will go into some curry's and crumbles respectively I'm guessing.Emergency Fund - £8572.39 / £10,000 :: Mortgage OP 2025 - £LISA 24/25 - £3200 / £4000 :: NSD 2025 - 2 / 150 :: Books Read: 1 / 52 :: Decluttering - 4 / 1000Engaged 9th December 2010 :: Married 29th October 2015 :: Bought a House 13th January 20175 -
Bimbling along, I stripped down the roast chicken and then had a moment where I couldn't be bothered with anything so the whole lot went in a pie with frozen peas, sweetcorn and a tin of condensed chicken soup. DS came round so we had three big portions for supper and the rest is his for when he cat sits for us over the weekend + (we leave Thursday, back Tuesday). Today we can have cauliflower and pasta cheese. We are meeting the lady and her dogs who are looking after our dog while we are away this afternoon, and I have an online study group this evening so it might be a late afternoon supper. Dog got me up at 0430 this morning (DH omitted to pull the curtains so he sees the car headlights). At least DH can see enough to put the dog to bed.Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Oh lordy you've reminded me that as well as lots of other random veg-box contents to use I still have a small cauliflower too - that might end up being used for a cauli & pasta cheese bake on Friday to replace the planned curry!
Not so much reverse planning here this week - more firefighting after several replacement items in the veg box caused disarray to what I had planned! Some root veg gone into a bake - which included a spare single portion for MrEH last night. I have got a truly enormous savoy cabbage to factor in too - there will be lots of stir fries coming up!🎉 MORTGAGE FREE (First time!) 30/09/2016 🎉 And now we go again…New mortgage taken 01/09/23 🏡

I,ve never tried substituting Savoy cabbage for red cabbage in my shredded red cabbage, onions and sliced apple recipe with chopped Frankfurter sausages but I imagine it would work equally well.2

I also got an enormous savoy cabbage in my veg box, in addition to a huge bag of spring greens and a bag of spinach I already had! I found a great recipe for a mustardy greens side dish which is really quick and yummy - I think we’ll be having this every night this week to use them up.
