    Well done on the 5 minute meal pan EH!

    Snap @ruby_eskimo - I've also promised DH mince pies but will them until tomorrow as only just bought the mincemeat and certainly don't feel like making pastry now!  I've got some chopped apple in the freezer so will get that out and also make an apple pie for him which can be portioned up and frozen once cooked.

    Sweet potato soup made yesterday was very nice so I'm glad to have 3 more portions for the week and mushroom risotto is on the plan for me for dinner tonight.

    Have started making a meal plan for next week and looks like we don't need a lot 👍  Need ideas for 2 more meals but that shouldn't add too much to the list.  Will also need to plan on when it's best to go and get the veg and cream for Christmas day, I'm going to guess Wednesday night along with everyone else probably!

    Going to use up some of the LO roast chicken from the weekend tonight with some chips, beans and pickles.  Think there may well be enough to freeze some slices for another meal plus some bits which will be going into a Spanish rice dish tomorrow night with some chorizo from the freezer.

    Off to make some pastry to make the mince pies and an apple pie for DH, most of which will be frozen so they don't all get eaten in a day or two!

  • Cooked a piece of gammon in the slow cooker yesterday, plenty left for meals and sandwiches this week. Am planning on a loose version of carbonara for dinner tonight using some gammon in place of bacon and will add some cream which needs finishing. 

    Also made a big pot of soup this morning for lunches this week - used up the gammon stock and the remains of a bag of spinach (which was looking decidedly dodgy) with red lentils and a few squishy tomatoes. Yum 😋

  • Well although MrEH's rugby training is (unsurprisingly!) cancelled tonight, he's still planning on going to the club for a while, so I'll stick with the usual Tuesday night couscous option. When I get home I'll chunk and roast thw last two sweet potatoes and half the punnet of mushrooms (actually might do all the mushrooms, but shove half of them aside for another night) plus a tin of chick peas added in 15 minutes before everything else is cooked. Then a bit of halloumi for the protein element and that will do us nicely.  I'm afraid the remaining lettuce is going to be heading to the compost bin - I just can't face any form of salad while there is six inches of snow on the ground outside - it's not even negotiable!  :lol:

    Soup here as well, parsnip and squash with a touch of curry powder to give it a kick. Green pea and mint made at the weekend also leek and potato with chilli made yesterday. We seem to have it on the day I make it, and, then freeze approx 2 portions for another day. You'll note the soups at the moment have no bits in it.
    Appt tomorrow for DH with the consultant at the hospital, It's hard to believe it's almost 6 wks since his fall. Chocolate cake and steak if it's good news, sausages if not. Fingers crossed and hope the weather holds.

    EH - have you tried lettuce a la Francais?  It's just braised sliced lettuce with sliced spring onions and some frozen peas.  It's really delicious.  I often make it when we've got lettuce which needs using up.  Little Gem works best but I've done it with iceberg and other lettuce as well, just tastes a bit different.

    I just braise it some water or stock until the peas are cooked so about 4 minutes, the spring onions will still have a bit of bite and the lettuce will have wilted.  I prefer stock if I have some but it's fine with just water if I don't have any stock to hand.

    I can second the pea and lettuce idea if you look online a lot use cream which I don't but if you have a bit of butter use that when softening the spring onions.  This is a simple one, I've also added done it with a bit of bacon or pancetta I just chop and fry off first and use the fat to soft the onion
