Hard boiled egg salad for us last night - we are still struggling with too many eggs.
I am going to beat a dozen and pour them over chipolatas that have been twisted and snipped into threes and popped in an oiled mini-muffin tin to make crustless quiche-like mini-bites. I used to do these when DS lived at home and would grab them when he was running late or just instead of fatty, salty bought snacks. I have Cumberland sausages defrosting too, for supper with steamed veg. 10 pounds lost now, so incentivised to keep up the no starchy carbs or added sugar (except the syrup I bottled fruit in) until EasterSave £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)
OS Grocery Challenge in 2025 I am at £1286.68/£3000 or 42.89% of my annual spend so far
I also Reverse Meal Plan on that thread and grow much of our own premium price fruit and veg, joining in on the Grow your own thread

Got a fab TGTG bag from Costa yesterday - was like it was made for us! One vegan fake bacon roll (me), regular breakfast wrap (OH), fake ham and cheeze toastie (me), cheese and tomato toastie (OH), couple of cakes. So that's breakfast, lunch and snack sorted!
Dinner will be chicken breast for OH and YS salmon fillet for me with loads of veggies.
Got two veggie sausages in the fridge which I will make into sausage casserole for dinner tomorrow loaded with veg, OH will be fasting so he'll probably have poached eggs on toast for one meal and pasta with low cal sauce for the other meal.
Got lots of easy peelers left from my Olio collection at the weekend so will be canning them in light syrup later on this week.1 -
Reverse planning is going well for us - the fridge was basically bare yesterday before we went shopping - apart from a few carrots and a cauliflower. Made a couple of portions of Indian Masala Carrots with lentils for lunches over the next couple of days and will make cauliflower cheese soup using the cauliflower on Wednesday which should give me a couple of portions for the freezer too. All using things we already had 👍 We're going out for dinner tonight to a new restaurant in town which is doing a soft opening and therefore offering a 15% discount off the bill so a little MSE!

Trying to use up what's left in the fridge as we're going away for a week on Friday. Yesterday I roasted the last of the carrots, half a pepper. Had a carton of almond milk in the cupboard so made a rice pudding but saved a small amount of it and made a couple of chocolate mousse for pudding tonight which also used a couple of eggs up, plus a little of the tin of cocoa powder in the cupboard (which doesn't get used much!), however if the chocolate mousse is a success then I think it's something I can make a bit more regularly when I've got eggs going spare!
Lunch today for me will be a jacket potato which is beginning to sprout with some tuna mayo plus some salad bits from the fridge - will use up the last of the spring onions, some of the lettuce and probably most of the cucumber. There are still quite a lot of cherry tomatoes left but happy to take those with us if there are any left (we'll be self catering). DH is having a burger in a roll for his lunch as there's a lone burger left!
I've got a large chicken breast out of the freezer and will marinade that overnight in some jerk seasoning ready for dinner tomorrow night which I'll serve with rice 'n' peas (have also got some coconut milk out of the freezer for the rice - so a bit more used up).

Not really moaning as the person in question is lovely.
Friend arrived with "Just going to help for a couple of hours with cutting up the trees" "No I don't need lunch as I have to get home"
Lunch made for DH and me - DH and friend arrived with 'We just need a drink'
Another two hours later - after him eating my lunch - he went home. Good job he's a nice person!!
Tea is all from the fridge, yesterday's pork turned into a sort of casserole, there's a bit of cheese left and some fruit in the bowl so that will do for afterwards. I just needed a bit of a sit down before I started on all today's jobs which haven't been finished - hence the posting.1 -
1/3 bulbs of fennel used tonight in sausage fennel pasta. Not fancying everything on the plan (that I wrote 4 weeks ago!) so picked up a few bits today, to make a few different things. I twisted and cut sausages in half and added a bulb of fennel (sliced into 1cm pieces that might have resembled parsnips
) and carrots, onion and bits of frozen prepped pumpkin, roasted these then added my last bottle of homegrown tomatoes and a handful of grated mature cheese and re-roasted for another 20 minutes -very tasty and filling (and on-plan) with steamed cabbage.
I picked up a TGTG bag from the M&S at the local garage but it was only 4 items and no fruit or veg. So in the freezer is a pot of prepared mashed potato, fish cakes, chicken tenders (whatever they are) and bread and butter puddings. I added a net of clementines and the chap took 25% off because the bag had split (I so nearly suggested they could go in the TGTG bag). I was hoping for F&V as I only have a couple of onions, some carrots and two whole cabbages (white and savoy) left. I would be making coleslaw but I have some. Still hoping to make it through March without a big shop.

Dinner tonight is prawn linguine using up a pack of king prawns from the freezer and will add some roasted cherry tomatoes in there too with some cream cheese to make a "sauce". I'm still using up my wonky avocados from the Morries TGTG bag from a couple of weeks ago! Will be having one with some prawns from the freezer with some of the salad stuff from the fridge for lunch.
Have marinaded a chopped up chicken breast in jerk seasoning for dinner tonight. Also got out a "puck" of frozen coconut to add to the rice 'n' peas. Only problem is I've now got to go and buy a tin of kidney beans as have run out! I'm not going out them specifically as also need to buy fruit. Had hoped to last out this week but not to be. Going away for a week end of this week so only going to buy what we need.
