  • The soup was a leek and potato with a very sad looking parsnip that went in there too. Next one is on and I can see the bottom of the veg stocks now!

    That sounds interesting, do you have a recipe?

    The sauce is 2 peppers cut into strips, fried in olive oil, add a clove of crushed garlic. Add a tin of tomatoes, a tea spoon of red wine vinegar. Basically simmer. I thought it was a little bland today so I added a bit of hot sauce and smokey cheddar!

    Had salads for the two days last week

    Pasta salad Monday and Tuesday
    Wrap and a cuppa soup today
    Taking leftovers (spicy root vegetables and lentil casserole) tomorrow ☺️
  • More leftover pasta yesterday (prawn this time - yum!) and I had the foresight to cook twice as much dinner last night so was able to package up chicken en croute and some cabbage for lunch today. Tomorrow is my day when I have to pack lunch and dinner, and I have no access to a microwave or anything so it will likely be sandwiches all the way!

  • And the final use up soup for these veg was a lovely tomato and paprika soup! A trip to the shops tomorrow and I'll see what I can conjure up next week!
