    Now on 5/17.

    Had a baked potato with leftover pork chilli on Thursday and Friday's lunch was leftover cheesy gnocchi.

    My breakfasts are normally the mini muffins from the One You Easy Meals. Really easy to make for the week ahead.

  • Managed a lovely sweet potato and tomato soup on saturday but unfortunately fell short of the mark today as I had to be at work at stupid o clock so that's me up to 5!

  • Leftover turkey mince lasagne - nice in theory but I need a smaller oven dish to make it in so the sauces aren't spread so thin :rotfl:

    Left over chicken and bacon pie for lunch today and tomorrow.

    Day 3/16 complete another cheese sandwich, I need to mix it up a bit.
  • 7/22 took more root veg casserole.
    Pop the rest in the freezer which will do for a lunch next week.
    8/22 pasta salad

    Going to make some soup now which should last for two days.
  • Hey all - just checking in! Still on track, and ended up working last Saturday, but still managed to bring a packed lunch even though everyone else was getting stuff from the chicken shop! Very pleased with myself there. Grabbed a packet of instant noodles for lunch today (the nice ones that you get in Asian supermarkets with the four different sachets of stuff) along with a yoghurt and a packet of crisps. Not the most nutritious lunch, but have made up for it by packaging up this evening's leftover squash risotto for tomorrow.

  • Turkey mince lasagne again, still got two portions that will have to go in the freezer! Making cajun dirty fried rice tonight so that will make up my two lunches for tomorrow & Friday :)
